If you like perfectly uniform pickles, fruit/veg chips, and things of that nature - they speed up the process big time! Otherwise, generally, I do not process enough product at home and a knife is the prefered tool.

Mine arrived! I can see multiple issues making it a second, but only one within it. I'm sure it will be good to go. I've never had a cast iron pan before. All SS and some non stick here. That hinoura looks like the food release would be even better left handed. My Takeda could probably benefit from a bit of thinning. It’s certainly not effortless to use but food sure doesn’t stick to it. Same here man! Used it tonight, painful on horizontals for onions, ha, but they sit in nice dic...
