My wife uses a PS60 and loves it. Edge life is so / so, but adding in a hi soft board, gentle technique, and teaching her to simply just strop (get seconds leather on close out even) it can extend edge life quite well!

On the opposite end of the price spectrum, I've also consider the Kanehide TK line. I'm worried about it's edge retention with crispy skin as well though. I'm unsure if that's just a lateral move from the DP, but I may be wrong. I'd be happy if I was, ha!

Perfect idea Sean. My father is almost 70 and going absolutely stir crazy as well. He's frustrated we keep doing all of his shopping as he just wants out. He used to yell at me for wanting to go out and now the tables have turned, ha. Very thoughtful!

I always just clean my knives with hot water and my fingers, wipe dry on a dish towel. Same here. Obviously, adding soap to the mix when called for as well. I think the real issue here is very clear: she states several times that she's seen the knife go through phone books and pineapple online unscathed, implying toughness. I imagine a lot of people confuse sharpness with toughness when people online cut plastic bottles filled with water or phone books...
