i believe TFs are harder than honyakis. I wouldn't think so. I know many Honyaki's are 68-69 hrc before tempering. I think after all is said and done and ready for the stores, i think honyaki typically sits between 63-65 hrc while TF denkas are slightly higher at 65-67. Then again all this hrc stuf...

The edges of some knives are also fatigued coming from the smiths shop depending on how they were sharpened making them chippy. Sharpening and exposing fresh steel stops the chipping. If someone is having no luck with sharpening, try raising your angle a bit until you feel the knife 'grabbing' or 'sticking' to the stone during your passes. Medium pressure. From a practicality standpoint, kens rolled up paper towel test might be the most useful test I can easily explain. My favorite steak knives for sure, are the serrated ones with the big chunky wood handle. Typical steakhouse knife.
I like that the large serrations tear the meat rather than slice it. I like eating the texture of it better than eating perfect slices.

Harder versions of white and blue
I'll be looking for possibly a santoku or maybe a 150 petty in the near future. What are some of the harder examples YSS carbons available? Money, handle, price, home or pro, stainless clad vs soft steel, etc....none of it matters. It's all good. Cheers.

For my kitchen knives, I use a hair popping test and Ken's rolled up paper towel. If I can move my knife gently along my arm hair(midway the height of the hair), and hairs are literally popping off easily AND it slices through a rolled up paper towel with no downward force...it's sharp and has bite....

Hey Fella's Here's a shot of the Ko deba. Fantastic little knife...white steel. Finish done by 1.5k carbide...edge by Kozaki Aoto. Extremely sharp and great little knife; very useful. Thanks guys. It's been such a joy to work on and take care of. The steel is fairly hard so it's taken a while to get it where it's at...and I'm happy with it now.
It was a bit thick when I first got it...quite a bit thicker than it is now. I had the blue #2 blues.
