Re: Harder versions of white and blue

i believe TFs are harder than honyakis. I wouldn't think so. I know many Honyaki's are 68-69 hrc before tempering. I think after all is said and done and ready for the stores, i think honyaki typically sits between 63-65 hrc while TF denkas are slightly higher at 65-67. Then again all this hrc stuf...

Re: Harder versions of white and blue

The problems with high HRC whites / blues are user techniques. I took a TF through an entire case of butternut and acorn squash splitting them. No chips. It’s all end user and people don’t like to admit fault, blame the smith complain to mark and then mark stops featuring him. His products are an a...

Re: Harder versions of white and blue

The edges of some knives are also fatigued coming from the smiths shop depending on how they were sharpened making them chippy. Sharpening and exposing fresh steel stops the chipping. This is not a new or uncommon phenomenon. I've had this happen as well and it's not uncommon to get a new knife wit...

Fujiwara TF Nashiji comes to mind... https://www.teruyasu.net/products/detail_9.html I remember those. I think the first ones had problems with chipping. Re: Blade Sharpness testing

If someone is having no luck with sharpening, try raising your angle a bit until you feel the knife 'grabbing' or 'sticking' to the stone during your passes. Medium pressure. This means your sharpening the acute part of the edge when you feel the grabbing. The knife will slide easier across the ston...

Re: Blade Sharpness testing

From a practicality standpoint, kens rolled up paper towel test might be the most useful test I can easily explain. If I’m establishing a new edge on a coarse stone, I know not to advance until I pass this test even if i’m a 320 stone, or even a 140 plate for that matter. A sharp knife will pass re...

Re: WTB Konosuke Khii Ebony Handles

Hello Jeff I have one coming in for a new handle install it is a really nice handle. Just curious what will you do with more than one? I have a few older Konos with Ho wood handles that I'm planning on putting the newer Khii Ebony handles on. Really like those handles after buying a couple Fujis. M...

Hi Kalaeb. Yes just high hardness. I would prefer AS.

Two that I've found on the site are the Gihei with blue #2 at 62-63 Hrc...and Koishi with AS at 63-65 Hrc.

Re: Takayuki steak knife

My favorite steak knives for sure, are the serrated ones with the big chunky wood handle. Typical steakhouse knife.

I like that the large serrations tear the meat rather than slice it. I like eating the texture of it better than eating perfect slices.

Harder versions of white and blue

I'll be looking for possibly a santoku or maybe a 150 petty in the near future. What are some of the harder examples YSS carbons available? Money, handle, price, home or pro, stainless clad vs soft steel, etc....none of it matters. It's all good. Cheers.

Re: Blade Sharpness testing

For my kitchen knives, I use a hair popping test and Ken's rolled up paper towel. If I can move my knife gently along my arm hair(midway the height of the hair), and hairs are literally popping off easily AND it slices through a rolled up paper towel with no downward force...it's sharp and has bite....

Re: Konosuke White #2 Fujiyama after 5 years

Hey Fella's Here's a shot of the Ko deba. Fantastic little knife...white steel. Finish done by 1.5k carbide...edge by Kozaki Aoto. Extremely sharp and great little knife; very useful. I originally got it for $20. It's more or less a tall petty. :) https://i.ibb.co/BPZsDc9/IMG-20190322-201530401-HDR....

Re: Konosuke White #2 Fujiyama after 5 years

These are the stones I'm currently using(I could get a much fancier shinogi and finish if I wanted...I'm not concerned). I've attained nice results previously. Left to right is: 1.5k carbide, Kozaki Aoto 3-4k, Shinden Suita 4-6k. https://i.ibb.co/3rx1wg0/Stones.jpg Cleaning powder from flattening na...

Re: Konosuke White #2 Fujiyama after 5 years

Thanks guys. It's been such a joy to work on and take care of. The steel is fairly hard so it's taken a while to get it where it's at...and I'm happy with it now.
It was a bit thick when I first got it...quite a bit thicker than it is now. I had the blue #2 blues. :D

Konosuke White #2 Fujiyama after 5 years

I've had my White #2 Fuji 270 for 5 or 6 years. In that time I've done a huge amount of thinning and work to it. I basically added my own aesthetic and as you guys know these knives came without a shinogi. From the sharpening and thinning, it now has a shinogi on either side. It's super thin behind ...
