Ikeda KS AS 250mm with an Isiah Schroeder handle
Kikuchiyo 240mm B2
Tsubaki Kori 240mm B2 (I haven't but want to round the spine and edges. When I do I think I will like using it even more.)

I use normal synthetic stones and not diamond plates for all my knives. I use VG10 that is 60 HRC all the way to HAP40at HRC 68. As before it is based upon the Smith. Like for instance I have a Shiraki Konosuke VG10 santoku that is screaming sharp after I have polished it up on my snow white 8K and ...

I have used and rave about Sukenari HAP40. It is actually easier to sharpen than you think. Just gotta find the sweet spot where you almost feel it click into place. I use Shapton glass 500 and 1k for when it is bad. I use the Green brick after heavy use for a long time and then Snow white 8k to put...

I would get the green brick of joy Naniwa Aotoshi 2k your best all arounder that you will use the most. Naniwa Snow White 8k to put that fine edge on it. Shapton glass 1k and 500 for when you need to put a new bevel or do a full progression and that is dealing with synthetic stones.
