Re: Permanent ban on ip address

Hello,

I also get a page indicating I have been permanently banned, but I don't know why. Is it possible to un-ban me?

My IP is: 31.10.161.16

Thanks!

Re: Tojiro White #2 Nakiri Differences

I confirm that the edge retention on the White 2 Tojiro is not stellar compared to other brands. This can be seen as a good thing as you will have ample opportunity for sharpening. I have several other brands with White steel (Yamashin, Ashi Hamono, Masakage Yuki) and they all have from somewhat bet...

Re: What is your favourite bunka <= 165 mm

I have a 165mm Masakage Koishi bunka which I really love. Great fit and finish, very good grind, AS steel (clad in stainless) which stays sharp for a very very long time.

Re: Santoku vs. Bunka? How's the Yuki?

I don't know if Mark has the ko-bunka in stock for the various Masakage lines. Unlike my gyuto that I purchased from Mark, I got the ko-bunka from another site. I really liked the size/shape. For me it is easier to use on a board than the lower profile petty knives as I have big hands.

Re: Santoku vs. Bunka? How's the Yuki?

I have the koishi bunka and it has become my main knife. Part of the reason for using as short a knife is that I have very little counter space in my apartment (depth wise), so big (deep) cutting boards and long knives are difficult to use. Regardless, the koishi bunka and koishi 210mm gyuto are my ...

Re: knife shopping in Japan

I wouldn't worry about the quality or performance of Aritsugu knives. It is all a question of the type of knives you are accustomed to using. The Masakage Koishi knives I got from CKTG are at the high end of the performance spectrum (of those I've tried...), and my Aritsugus are just below, though s...

Re: knife shopping in Japan

I visited the Nishiki market in Kyoto in 2014 and bought a few knives at Aritsugu. They were my first j-knives and I still enjoy using them. They are slightly lower performance than say the Masakage Koishi range, but for value or quality to price ratio, they are excellent. I have a 180mm Santoku and...

Re: What are your keepers?

I'd say all of my knives are keepers with the exception of the Tojiro, 2 Yamashin and Takamura Gyuto (though my wife likes that last one). Those that are certainly keepers are: Masakage Koishi Gyuto 210mm (preferred) Masakage Koishi Bunka 165mm (most used and best connected with due to shallow count...
