All these knives have been used in a professional kitchen. They are all fantastic knives that have served me well over the years but just aren't seeing any action anymore since I have stopped working as a cook/chef. out of all my japanese knives and fancy steels. my go to at home are my mac superior knives. i have the santoku and its pretty much all i use when im home.

i have the large cleaver, its pretty good for its price point but the sharpness loses pretty quickly. i do work in a kitchen so maybe its not meant for professional use. other than that, the handle is nice, its durable, and looks badass

i've owned a misono ux10 and honestly i didn't like it too much. the knife would steer towards one direction while my 50/50 bevel knives just went straight down.
