Is there a reason you have ruled out the Takada Classics? AS core with reactive iron cladding and a tall profile. Seems to check all the boxes.

I've been intrigued by the Yaxell Dragon series. This one is pretty heavy for a 210, uses some fairly good steel that's supposed to have excellent edge retention, and the Micarta handle should last a lifetime plus some. Don't need a 210 myself right now so I haven't pulled the trigger on one yet but...

Silicone baking mats. Good to 450 (ish) degrees F. Nothing sticks to them. Put one of those mats on a cookie sheet and bake your butternut squash on it and clean up is a breeze. They're cheap and re-usable (many times). I started using them instead of foil to line my cookie sheets after reading more...
