Re: How many BTU do I need?

Thanks for the recommendation. A quick google search for Eurostoves seems to indicate that the company and Trevor may no longer be in business and possibly have the money of customers who are unable to get their appliances. But most of all, I live in Canada so I'd have to carefully calculate if cro...

Re: How many BTU do I need?

I still don't own a house, but seem to sometimes find myself obsessing over what range I want. I was recently at a home reno show and there was an appliance company there with a bunch of brands, and they steered me toward Thermador, as I was asking about open burner stoves. The Thermador has star s...

Re: Whipped Cream Siphons

If you are interested in whipping siphons, I would recommend isi brand. They have a variety of siphons available depending on what you are trying to use them for. If you are interested in infusions with alcohol Dave Arnold has many blog posts and videos as well as a terrific book called Liquid Inte...

Whipped Cream Siphons

I know I am late to the party, but does anyone have a siphon and, if so, do you think it is worthwhile ... or has the trend passed?

I was thinking making bitters, maybe foams, infusing booze, and generally play around with it, you know hollandaise, mousse, etc.

Any insights would be appreciated.

Re: Black Lotus Knives

I am truly enjoying this knife. I love the way it looks and, while my other quality knives are far thinner, I actually appreciated the extra heft. I have been wanting a 240ish for a while and this confirmed it. Size does matter. And, while, this isn't a laser, even close, it is ore nimble than i exp...

Re: Black Lotus Knives

Hi. I just got the knife and finished my first session. It is a gorgeous speciimin. That handle, va va va voom. I liked using it a great deal. I usually use much thinner knives, but loved the confidence and heft of this one, while still being able to slice things thin.

That video was awesome. Anthony Bourdain was so eloquent, so respectful, and had some pretty good knife skills.

I am reading Ed Levine's "Serious Eater." Not a cookbook, but does have some recipes. Definitely, an interesting memoir.

Re: Favorite Cookbooks and/or Kitchen Related Literature

I recently re-read "Kitchen Confidential," which is haunting because he mentions depression and alludes to suicide. It is so sad because unfortunately we know how the story ends. I also just got Kenny Shopsin's "Eat Me," Kenji's "Food Lab" and "Salt, Acid, Fat, Heat." My sister-in-law gave me a boo...

Vitamix

I don't know if you all know about this, but there is a coupon code you enter at checkout for any Vitamix item. It gets you 10% off, free shipping and three small spatulas that help you get into the corner of your container.

It is champvita.

Sausage and radicchio risotto. It was over the top good.

Sounds like it was ridicchulously good.
Many times in this forum I reach for a like button (this was one of them). But, alas, no like button.

The pure Thai cookhouse in nyc, love that place, been back more than 4 times already.

I live right near their other place, Land, which is excellent. Near there, have you tried Wondee Siam (any of them). They are very no frills, but awesome.
