Whipped Cream Siphons

I know I am late to the party, but does anyone have a siphon and, if so, do you think it is worthwhile ... or has the trend passed?

I was thinking making bitters, maybe foams, infusing booze, and generally play around with it, you know hollandaise, mousse, etc.

Any insights would be appreciated.

Hi. I just got the knife and finished my first session. It is a gorgeous speciimin. That handle, va va va voom. I liked using it a great deal. I usually use much thinner knives, but loved the confidence and heft of this one, while still being able to slice things thin.

I am reading Ed Levine's "Serious Eater." Not a cookbook, but does have some recipes. Definitely, an interesting memoir.

I live right near their other place, Land, which is excellent. Near there, have you tried Wondee Siam (any of them). They are very no frills, but awesome.
