I find it's very easy to find on the coarse stones with your finger going perpendicular to the edge as mentioned. I keep a Victorinox 8" chefs knife in the drawer for all the occasions Mark mentioned. Cut up a pineapple and watermelon yesterday. Didn't even think about using a J knife. Just powered through it with the Victorinox and never had a worry about chipping or breaking anything.

Those MM B#2 are a real sweet blade. Very versatile profile. Sturdy, yet still glide through anything. Nice price! This shouldn't last long. GLWS! I agree 100%. It’s the best all around profile I’ve used. Thick spine to give it some weight and very thin behind the edge to just move through product....

MM b2 with the ebony handle for sale. The knife has been used a bit but not sharpened beyond some touch ups on my 8k snow white. The knife is very impressive but fully reactive knives and I do not seem to get along well. I polished off the patina with BKF before the sale.

I believe I get everything in 2-3 days down here in Florida. Amazon Prime and CKTG have heightened my expectations for shipping times. I have ordered some stuff from AliExpress and the 3-4 weeks is a terrible wait.

I agree, the bright custom handles are not my style and I don't care what knife they are on, I'd never buy one. At this point I still check every day but generally feel inundated with "old knife, crayola handle".
