Re: Mr Imanishi’s basement stone

So I suspect I am way to late to the party, my fault for not being active, but is there any chance to snag one? I love low grit stones product page link didn't work so I assume no. I believe I cleaned him out of this one. I'll try and ask him for some more odd ball stuff. This one was really fun fo...

Re: 210 gyuto and a petty

have you considered a petty might not see much use? I rarely if ever have found a specific case in which I need one. Cool knives and fun to use if you main a larger gyuto, but if you are rocking a 210, maybe a petty won't have much use. 120 still seems a bit big for in hand use. Maybe a 100 or smal...

Re: 210 gyuto and a petty

ah! my bad, just my two cents.

the kohetsu HAP40 has always caught my eye. Its a bit more at 115 and also only semi stainless. at 65 hrc, if it chips its a work out to fix, but if treated will a little care it should be a great knife

Re: Knives to Bring to Chicago Show

Jeff, I was so happy you brought the knives. Helped me greatly with my ongoing debate about whether to get a Makoto. What a joy, handling yours. Now it’s a no-brainer, if only it comes back into stock. Very generous of you! I really want the 240 myself. Looks like its a fun knife to refinish and pl...

Re: Mazaki Watanabe comparison

I just got the watanabe 240 KU From what I gather its actually the same knife as the pro, but it doesn't have the ku ground off so its a tad bit thicker at the spine. He does a great job with heat treat and getting thin behind the edge. Haven't had issues with chipping. Its a workhorse through and t...
