Re: Konosuke Updates
This is what I was referring to. I think they've answered my question about it being core steel. If so, in my opinion I think it was one of the aesthetically pleasing stylistic marking in older Fujiyama knives. Good to see it on this one. (Wouldn't mind some Fujiyamas with it too!) Actually, it is ...

Re: Konosuke Updates
Question, what was the square stamp with kanji in the middle? I've seen it on another y tanaka knives not under the Konosuke brand as well as older Fujiyamas pre-Fuji mountain stamp, I always assumed it was his as the smith, but my understanding is he's not the smith on these? Is it signaling somet...

Tempted but this.
Two questions:
Would the universal backing plates need any mods to hold natural stones? I heard they can.
Any issue putting this atop a zwilling Kramer sink bridge?

Re: Konosuke Nakiri - real deal?
Cutlery Tsubaya at their brick and mortar shop have a wider variety of Y. Tanaka (Fujiyama smiths) knives, including if memory serves a Nakiri. Could check if someone sells those. I know other retailers (assuming its kosher to say, since we're already talking about things not carried on this site) s...

Re: USPS Shipping Delays
Until recently, I've had tremendously good experiences with the post office for the most part, and some bad ones. But also feel the same about UPS and FedEx. They've lost things before and not arrived when they said they would. Private vs public has nothing to do with it. Plenty of countries have pu...

Great knife, had one for two years, recently fell back in love with it. Wish the profile was still the Mazaki one. GLWS.

Re: New mouth to feed - ideas?
I got a VERY picky cavapoo puppy last September. Went through a number of different diets and read a lot about dietary issues. For puppies vs adult dogs, you really need to be careful about feeding your own dog food blends to them, even pure meat. They've got a lot of specific needs. If you're makin...

Re: Konosuke Updates
I'm sitting on my front porch reading these posts waiting for mine, which is supposed to arrive any time. I have not gotten that dreaded message yet, so I'm holding my breath. Sounds like maybe this is not your first Konosuke thetoe? I've been waiting for the new FMs since I first started my free f...

Re: WTS Konosuke SLD Fukushima 210mm Gyuto
It is Nihei, not Yoshikane. However, Nihei apprenticed in the Yoshikane shop so there are a lot of similarities in both style and quality. https://www.instagram.com/p/B-_unkhDOm0/?utm_source=ig_web_copy_link I own the Carbon Nihei in 240, nice knife. My dad has the Yoshikane Dami 240. The Yoshikane ...

Knife to practice thinning/ polishing
So I'm thinking the Tojiro ITK is the answer to this. But if I want to use quarantine time to really work on getting thinning and subsequent polishing with a kasumi finish down without using one of my 300 dollar plus knives, what knife is recommended. I got all the stones already. Is there anything ...

Re: Depreciation for modified knives?
When handles, blade profiles/ grinds, and fit and finish are improved by known pros, I think they can increase the value if there are known issues with the original blades. When done by amateurs even skilled ones probably not.

Re: Mazaki knives
These versions of Mazaki 's work are widely considered the best currently, at least for his W#2 steel https://www.echefknife.com/product/yoshihiro-nashiji-high-carbon-gyuto/ Yes, I was told this same thing by someone on instagram to be honest. Thank you btw, i looked on many sites and never came ac...

Does anyone have Tall Bunka/Cleaver Comparisons
I've noticed a couple more other than the tank appearing on the site. Has anyone tried them, able to discuss pros and cons of each? Interested in the profile, not sure whether to hold out for the Tank, or its just first and scarce? I try to somewhat use what I buy so don't want to get something just...

Re: anyone bored yet? Lets design a knife!
Chinese cleaver/ bunka hybrid. Same as Jeff B, I love Gyutos, but started to dread buying them because I know they're going to be used for a week and then just sit in the back rotation for a few months, and I'll still want my next fix.

Re: Gesshin Ginga
Kinda awkward on another dealer's proprietary line... but my understanding is that Jon has made specific fit and finish requests that require a little more time. Honestly there are a number of Konosuke lines that are similar, for example their Nashiji Fukushima line and SKD lines are a little pricie...
