Re: What do you think about these Japanese Pans?
the skillet doesn't look smooth enough compared to the French ones. I think there are better options for woks out there and I don't really think the woks would add anything to what is already out there

Re: MIYABI BLACK 5000MCD67 for $200 is it a good deal?
No to the Kramer carbon as well unless its the perfect knife for you. It's a fairly heavy knife that feels wider than most knives that I feel doesn't really suit push cutters at all. There are better knives like this for the price point. Both immediate resale values for the knives are fairly bad to ...

Re: MIYABI BLACK 5000MCD67 for $200 is it a good deal?
No. I feel like the performance of the knife in the title is worse than their Birchwood line and it has a stickiness to it that food tends to cling to and it makes it feel as if the knife doesn't cut through food as well as many other knives. Re: Mirror Polish fingerstones?
A tight sandpaper progression is probably what you want. Fingerstones really don't do "mirror". If you want some fingerstones, I can provide you with some. The polish they achieve is different from mirror, but more attractive in my opinion. There are several threads you can find on this f...

Mirror Polish fingerstones?
Does CKTG carry any finger stones or something like it to get a mirror polish on carbon steel knife that i have? I've tried using my whetstone but the polish was really uneven and i assume that that the grind probably is uneven in areas.

I don't really have a favorite.
I am looking for a damascus stianless steel (or rainbow damascus carbon) paring knife and some smaller rainbow damascus 180mm or below knives. Preferably lighter.

Re: Worst Knife Purchase/Sale Decisions
Quite a few. Before I knew too much about what I wanted I bought knives unseen that were much heavier than what my body build needed and what suited how I cook and what ingredients I used. My main chef knives ended up being 210mm or above when what I really needed was a lighter 180mm or below knife....
