I just today tried the phonebook and shoeshine method. Works a treat. Masked the whole blade and handle, and then used 400 wet/dry followed by 1000 to smooth it out.

To pull us off topic once more (apologies) .... have you felt the need to ever wax/oil the Sugi handle? It appears pretty well sealed from the start.

Actually, I might change my previous statement. If I could alter the Sugi handle a bit, I might make it even a bit fatter ... or at least somewhat more D shaped. Short, fat. Definitely. I just received a Sugimoto today - the handle feels perfect. Since you really grip the blade itself, a longer thinner handle only gets in the way, or fatigues the hand more. It really does, waterproof and maliable. Best part it it's not horribly difficult to remove. Looks intriguing, thanks very much. You can ask yourself 'how often do I wish my blade was longer for this particular cut'. But, if the answer is only a few times, it's probably worth ignoring - at least in a home-cooking environment - because the blade will be longer for every single cut. One knife probably won't feel perfect for eve...

Looks awesome! I love good ramen. Your eggs look perfect. My family thinks I'm weird when I sit there, stirring the eggs for two minutes to keep the yokes centred and then dump them into a bath of ice water to halt the cooking process. Have you tried shoyu marinated eggs? Adds a nice flavour to rame...

Awesome, thanks! I've used epoxy before but never on a knife. Is there a type that is accepted as the best for this application, or can I just hit the local hardware shop? I already use wax on the body of the handles and try to coat well that area where wood meets metal, but I assume stuff will get ...

I'm thinking about a small petty (<100mm) for carving and in hand work. I much prefer Wa handles over Yo, but this kind of work usually involves juice dripping in all the wrong places. Do you mean end grain hinoki? If so, the wood is so soft that there isn't any need for end grain. It's lovely stuff for babying your edges. I'm not a fan of juice grooves, but I also don't put drippy / saucy stuff on my hinoki/Aomori hiba boards. They will stain, even if you pre-wet them before use....

Keep in mind that a real straight is more forgiving and smoother than disposable straights are.
