Re: Favorite light cool chef pants

502 Levi’s are pretty what I use every day, I work in South Carolina where the mugginess in the summer time is ungodly. I have a pair of 868 pants that are my other go tops that are Very light and breatheable

Re: Knife for a pair of lefties

In practice a left handed bread knife isn't needed. Unless your parents are trying to do very precise cutting, the bias of a knife won't make.a difference if it below 70/30. That is were I start noticing shearing when using a right hand biased knife. That also seems to be the point were it makes th...

Re: Gyuto recommendation

Also if you were thinking of getting a paring knife, I’d forego that in favor of a 150 mm petty. A lot of them work very well for in hand and on board work and doubles as a good knife to break down meat and smaller fish

That'd be awesome, it's my favorite knife and I'd love to retire it fornhome use and have one just strictly for work. Oh and mods I didn't mean to post this in knife rec thread. Do I need to move it to the classifieds?

Re: Name for new Shibata knife.

I got a bunch. I told Shiba I wanted to make him famous. hahahahahha He is already famous in my book! The kotetsu is the greatest knife I've ever used. Just a few days ago I sliced 20 lbs of potato for au gratin, absolutely zero sticking. His grind is magical. I believe the KS clone will be the bes...

Re: The Golden Age of Culinary Knives

I wish I had caught the whiskey boom. I tried Pappy Van Winkle at a restaurant where I was helping with a 35th anniversary celebration and that I can never afford it again is a bit sad. It was good, but not hundreds of dollars good. Thankfully decent cocktails are still open to me. The knife market...

Re: Advice on Gyuto/Kiritsuke/Santuko

I'd consider a stainless clad knife with a carbon edge. Kurosaki AS, Kurosaki Laser, Goko W1, Anryu B2, Kanehiro AS, a rehandled Kohetsu AS, Masakage Yuki. Not hard to care for. The Yuki is in stock and would be a great intro to J knives at a reasonable price. If you want fully stainless, the Shiro...

I've always been curious about the western as in the same regaurds, in the knifefanatics video he comments on how it's got conceding on both sides but it's primarily a right hand ground
