Re: Show us your knives!

Mahalo guys! Hi Arthur. Thank you so much. Yes it has been a lot of fun...hunting.....digging under rocks.....listening for whispers...and then scoring :D And you are correct...the journey is far from over! My biggest unicorn is a Fujiyama Honyaki by Ashi. But there are several others too ...

Re: Konosuke Updates

So pumped for the white steel. I know a lot of folks go bananas for this smith’s Aoko, but there is no edge that is more silky than his W1 that I’ve ever found. As a home cook, Tanaka W1 is about as good as it comes. Just sublime stuff YES! And smooth as butter on the stones! One of my all time fav...

Re: Show us your new knife!

It's been a while, but this newest one raises the bar: Smokin! Vintage Swedish carbon? Yes sir. A little different than the others in the most recent series. It is Tanaka forged and Morihiro ground/sharpened, but it was finished by the same hand as the HM line. Been slammed with work lately, and do...

Re: Why so Hard to Land the Rare Knife

I've posted about this before, and very much agree with Omega on this topic. I'd certainly consider myself a collector but have never flipped a knife. The knives that I have sold in the past were usually because they just didn't resonate with my general preferences (I.E. a Shigefusa 240) and always ...

Re: Show us your new knife!

Not a new knife, but I gotta show a little love to Duy. After I received one of his floating knife stands, I felt compelled to send him my Kato 180WH petty. He had recently gotten a huge batch of buffalo horn so we decided to use it for the entire handle. Streaked blonde buffalo horn body & fer...

Re: Show us your new knife!

If I were Anthony Michael Hall, this would be Kelly LeBrock: I was there when Tanaka San and Morimoto San signed that paper for the knives. I would love it if they kept doing that for the unique pieces they're doing. That was a very cool touch! The packaging and presentation, from the paper selecte...

Re: Show us your new knife!

Ok that sounds good. I will start trying to do that. Thank you for the information. In all honesty, it comes down to luck and putting the effort in to the search. Also, like most anything else, building relationships is important as well. The forum is always a good place to start and don't be afrai...

Re: Show us your new knife!

That's awesome for him. I am very happy for him. Grrr! I wish I knew where to be able to get my hands on one. Lol. O well I guess I will have to wait my turn. Haha. Butlerhoosier, he says it IS very nice for him and he is very happy. He thinks if you are certain this, or any low-production/high-pri...

Re: Show us your new knife!

If I were Anthony Michael Hall, this would be Kelly LeBrock: What knife is this? It’s the knife of his dreams that he would create on his computer to satisfy his childish fantasies, then it would materialize to real life. He later would realize it wasn’t for him and he finds something closer to his...

Re: What’s the vintage Swedish Kono?

^^^Yeah. Thanks, Omega. This is the point: you're essentially describing the HM. And those sat for a while up here in Canada. I guess it depends on your definition of "a while". The HM that Tosho offered sat for 48 hrs and it was a completely new line... While I understand that the relati...

Re: What’s the vintage Swedish Kono?

Omega has the backstory nailed. I was lucky enough to grab a Togo Reigo from the initial run. If I remember correctly, there were 4 gyutos made available to the public via Tosho: 2x 210mm and 2x 240mm paired by handle material. I.E. a 210 and 240 with kurogaki handles and a 210 and 240 with ebony ha...

Re: Knives to Bring to Chicago Show

Really good thread and perhaps we can cajole lepus into adding an additional worksheet to the google doc. to reflect responses. List might get culled down a bit, but definitely want to bring a good cross section of Fujis and some of the more scarce knives in the block. Here's what I've got in mind a...

Re: Blue and White Discussion

This is well tread ground, but an individual smith's treatment can certainly blur the generic lines between steel. That said, every iteration of AS I have experience with (which, admittedly is limited to less than a handful of smiths) feels more like a PM on the stones and edge quality to the touch...

Re: Show us your new knife!

Matt definitely knows his way around a lot of different materials. He actually enjoys playing around with the less commonly used stuff so he was excited to work on this design for me. Super creative & super meticulous, and it always shows in the end product. Great pairing and fantastic executio...

Re: Show us your new knife!

Little taller, little more heft, over all better performance imo Perfect characterization. I'm not sure I'd say they are better performing than Fujis, but that is certainly subjective and I could see either side of the argument. Either way, I love this knife and hope they expand the line to include...
