Re: Yoshimi Kato

This is taken from the Knifewear website: "Second careers are often the best. I know a burnt-up chef, for example, who owns a few knife shops now. Then there’s Yoshimi Kato, who left his job as the project manager of a construction company. He became a blacksmith after marrying Hiroshi Kato’s d...

Re: Yoshimi Kato

It is my understanding Yoshimi is the son in law. I can't remember where I read it, but I definitely remember reading that he married into the family. I have an old Kanehiro AS gyuto, back when the kanji was hand chiseled and the choil not rounded, that I assume was forged by Hiroshi. It is an excel...

They are in the Boston seaport now - specifically the Design Center on Drydock ave. Can certainly stop on there floor sometime and ask some questions. Also a yes if people want to meet for drinks or beer sometime coming up - don’t make it in next 2 weeks as I’m traveling (business). Paul Sounds gre...

Re: Harukaze AS Morado

These are the same as the hitohira "futana sb kuro" line. Even has the same Kanji on the left side of blade. Cool to see that Mark sells them for $50 cheaper and actually has them in stock. They look like nice knives - the website demo one has a pretty gosh darn nice looking grind from the...

Funny, I just started using mine again after a period of storage. Don't know why but I never fully bonded with it before. Using it again after a sharpening session and I am in love. You are correct, they are terrific knives. GLWS

Re: Hi soft cutting boards

Love the thing. hasegawa woodcore series would be my choice over hi-soft. Really...why is that Ricky? woodcore helps prevent the b...

It is very, very hard work, and much more uncomfortable than being in a brick and mortar kitchen. With new regulations popping up in many cities across the country, it ...
