Re: WTS Arkansas Black 8x2 and Naniwa SS 10k

I tried Arkansas on my white 1 funayki and Kurosaki Fijun (others where zKramer and Dalman) .. felt really hard, but smooth, nice subtle feedback, slower then SG, but still pretty good (more time to correct any mistakes I might be making). This is my first, and only, natural stone. This kind of beha...

WTS Arkansas Black 8x2 and Naniwa SS 10k

Hello, I have two stones that I don't end up using as much these days: Arkansas Black 8x2 - Asking $60 - Arkansas used 4 times - My caliper shows 13.5mm left .. which is more than 1/2 inch it's supposed to be .. maybe they run a little thick. - Wanted to try "natural" stone feel, and it's very nice,...

Re: Show us your new knife!

New knife, new board.

Yoshikane Hammered 180mm in SDK and Hinoki cutting board.
Knife is amazingly sharp, just silly.
Board is aromatic like a pine forest.

Hello, I have the excellent Shinko Kurokumo R2 Damascus 270mm for sale. If Shibata had a taller prettier sister, this would be it. Edge is 265mm. HRC 63. The spine is 2.6mm tapering to 1.2mm. 58mm height. Weight listed is 260ish grams, I have no scales that can verify this .. feels lighter in hand. ...

Re: What is Your Oldest Kitchen Knife?

Here's mine. The one on the far let Chicago cutlery 150mm with black handle. The first knife I ever bought with my own "money" .. more like points from a grocery store, back when you can still get stuff for points. I learned to sharpen on it, I used it for thinning practice too. This is also my wife...

Re: Where can I buy empty knife boxes

In a pinch, use old amazon boxes and just cut/fold/glue to shape. This is for shipping knives, but it works for storage too.

Re: Convince me to NOT buy a Masamoto KS or Takeda Gyuto

There are some great knives you can buy for the price of a KS (as suggested above), but with a KS you're buying a piece of history .. so if that's worth something to you, nothing can replace that. As for Takeda, nothign really cuts like it .. it's something you have to try yourself. It's really not ...

Got a few new knives since last year. Two Takedas!
Great work thinning the edge! That's the one thing I didn't find optimal on my takeda back in the day.

Re: FS: Kramer by Zwilling 8 inch chef knife R2 Damascus

Nicely done keeping the finish consistent. Did you etch it after? Do you have a choil shot?
(I found my zKramer Damascus knives too thick as well)
