Your stones are fine, it sucks having that feeling you just screwed up your new stones but you did nothing wrong. I wondered the same thing when I started. My Kato 240 standard is my favorite Gyuto. This first time I used it I stared at the blade after dicing an onion, they aren’t lasers but the cut like it. Amazing blades with a well deserved reputation. GLWS.

I’m in Arizona, maybe the dryness has something to do with it. I weighed out the mixture to the gram and things happened fast, the only thing I forgot to do was tape the blade, I had painters tape handy so I didn’t lose much time there. I picked up this Kippington 240 with a fishhook grind a couple months, finished the handle for it today. It’s 52100. The idea is to enhance food release. I finished my second handle today. I learned a lot on the first one and that helped. When I set the handle on this one I had the tang hole fitted perfectly and made the mistake of using 5 minute epoxy, I was warned not to do that. Diamond Crystal is the industry standard for kosher salt. It craps all over Morton's kosher, which has huge crystals that make it easy to overseason food (and take forever to dissolve in liquid).
