Re: WTS IKEDA 225 TAMAHAGANE HONYAKI GYUTO

Up for grabs is this awesome Ikeda tamahagane honyaki gyuto. Only been used to make a couple of test cuts to compare to a white2 Ikeda honyaki, and it performed beautifully. I then attempted to polish the blade face with some jnats, didnt like the finish so it was sent to JKI and the guys made it b...

Re: What is this thing?

So.....I have a few knife steels. Just a few. 'Picked up this giant ceramic rod today, it was obviously used as a steel (I cleaned it quite a bit before snapping this pic). Does anyone know it's specific purpose, other than just a fat ceramic hone? I figured it would be good for bird's beak blades....

Re: Show us your new knife!

Fantastic aesthetic. Let us know how they perform for you. I'm extremely curious as to how they'll perform for me, & so is the maker. He said that they're thicker at the spine than most Japanese knives, but very thin behind the edge....& they are going to be a tiny bit heavier as well. They are "sh...

Re: Micro chipping on AS nakiri

I would caution you to reserve judgment on your technique and the knife until you have sharpened it at least three times. I never had an issue until I had an issue with a particularly thin ground Tanaka blue. The edge would chip and roll until I cleaned it up a few times. Now it is a badass. Don't ...

Re: My fault or flaw in metal?

It is definitely fixable, it would become a short chef/gyuto or petty though. Reach out to local sharpeners to get it reprofiled if you want to save it. If you just want to replace it, feel free to send it my way  Thanks for the thought. I'll consider this - if I can't find someone local f...

Just to keep you all in the loop the pony express has not delivered the knife, typical for where I live. I’m hoping to get it Monday and get the handle installed by Tuesday and sent to participant number two the same day, Andreu.

Re: Best food release options out there? gyuto or knife line

I have the Anyru, it does a great job. Out of all the knives I’ve used, the best for food release has been a Kippington fishhook Gyuto, fishhook refers to the grind. He’s a hobbyist out of Australia who has quite a following, I would post a pic buts its packed.

Re: Black Lotus Knives

Knife is suppose to land on my porch tomorrow. I should have the handle installed no later than Tuesday. I’m excited to put my eyes on Steve’s handy work with those finger stones and then try out that blade, gonna be fun!
