Micheal Christy is a great example of someone who perfected their own style of sharpening with a huge amount of success. Unconventional to say the least, a real student of steels, stones and techniques. I always enjoy listening to him. Wish he would get into chef knives a bit more.

The Atoma 140 is a great plate, I was gonna suggest the CKTG 140 but that shipping is nuts. I’ve had both and they both work very well, the Atoma is more refined but neither excels in speed and they both do the job of flattening very well. WTB sigma select II 3k

If you have a Sigma Select II 3000 grit stone you don’t use I’d be interested. Been trying out a few synthetics and I’ve heard a lot of good things about that line. I know where to find a new one but thought I’d ask here just in case.

I enjoy Nakiris and have tried a few. The Matsubara Tall Nakiri was one I really enjoyed, I like the size. CKTG sells a lot of these so I’m suspecting on not the only fan. The steel holds an edge and the look is pretty damn cool with Nashiji finish. I would look at the choil shot because they do var...

I gave Bosco two thumbs up as a recommendation on this knife. I have one I bought out of curiosity with the intention of selling, classic catch and release and I liked it so much it went straight into the keeper pile.
