Jeff Steele collaborated with friends of mine and they came up with the idea for this knife together. Then Jeff did his thing and deli...

Re: Newbie, stone advice

I think that would be a great place to start and give you years of service. I have a Nakiri I’m happy to donate to your cause. It’s a great knife to practice on. If you had that and that tojiro 210 you would have a couple of great practice knives. The knife was given to me for the same purpose, it ...

Re: EDC suggestions

Spyderco Manix, I have it in S30V. I have a bunch of EDCs but its my favorite. DMT diamond stones and spyderco ultra fine whip that S30V into shape very fast and the edge lasts a long time.

Looks like you are going to be right on this one Jeff! 2020 right around the corner with 4 or 5 still awaiting! Knife is supposed to here Friday. My second Black Lotus knife just shipped. I’ve only bought multiples from same maker with Kato, Shig, Kippington and Raquin which says something about Je...

Re: Newbie, stone advice

You guys are a big help! Thank you so much! I might just pick up a Tojiro gyuto 210 in w#2 - price seems reasonable and I think a better size for sharpening (and doesn't overlap the knives I'll be getting). I'll want a petty eventually but think bigger is better (?) for learning to sharpen and I mi...

Re: Newbie, stone advice

Well Melissa I’m glad you posted your question. Your certain to get some great advice by some truly knowledgeable people. I started j knives a couple years ago and the sharpening stones naturally followed. When I started sharpening I bought way too many stones, that’s how I am, I like to put my hand...

Re: Ideal traveling kit

Funny. I - we -spend the money on stones to sharpen other people’s knives. Both altruistic and selfish. We want to spread the gospel of sharp knives and do favors for friends and family ... but we also want practice and muscle memory too! (-: Absolutely! Some of the best therapy is my stone time, v...

Re: Ideal traveling kit

Think I’ve settled on the Shapton holder, the 220 or 320 SG, 2000 SG and 4000 SG. Plus a 3x8 leather strop loaded with 1 micron paste. Should all fit the holder. In some cases I’ll need a 4000 for CKTG knives I’ve gifted. If not I might add a 1000 and do a 220/320–1000-2000 routine. I’ll get some g...

Re: Ideal traveling kit

For a travel kit those Shapton Glass stones are hard to beat. They work great an a variety is steel, they are easier to store than any other stone I’ve used, true splash and gos, work quick and you could buy Shaptons stone holder that also works as a storage compartment. 500, 1k, 3k should get abuse...

Re: Replacing Naniwa Pro Chosera 400

I have a SG500, one of my favorites on a variety of steels, I also have a Naniwa Pro 400, also a great stone. If your use to that stone and know it’s characteristics there is a a lot to be said for just buying another one. If you wore it out you obviously like it. The SG is nice for being small, tru...

Neat looking knife and a nice write up Jeffery. I haven’t heard of Kanjo and took a look at the line after the write up. He makes an attractive ZDP gyuto, tempting. Wish I would have signed on for this one.

I’ve heard bits and pieces of the above Ken, nice to hear a more complete history. I look forward to your next post on the subject. I’m still in a novice stage of learning about J nats but it’s fascinating. I’ve actually looked at doing a stone mine tour in Japan, I know most are closed but you can ...
