I have the 210 version. Definitely not a light weight, but seems like a great grind. I am no expert, but it is one of my heavier knives. It developed a patina quickly, but once it did it seemed smoother to wipe down than other reactive knives I have. Maybe just my experience for what it’s worth. Enj...

I would think cedar would tend to be pretty soft. Even old growth. Fir, if old growth, seems to be much harder than what you can get now. What we see here on the west coast.

I wonder if anyone has seen a cutting board with a slot grooved into the board to hold a bench scraper? Could be on the side, or on the top. A thin horizontal cut. It bugs me to slide it under the board when not using as I have limited space. Just curious.

As for handles, I am finding myself gravitating toward the straight laurel handles. Thought the Khii Ebony were the ones, but really liking the uniform look of Laurel.

I love my Yuki! I think the fit and finish is pretty nice. Love the finish and how easy it is to wipe clean. Grind on mine seems good, and edge does need some touching up, but not that big of a deal since there are other knives in the rotation. My .02

I’ve got a buddy who does salmon with a small petty. Best fillet I have seen. Goes around the outside from the top to the bottom of the fish. I would love to copy the technique, but am afraid it would take me a while to get good at it.

Thanks for the recommendations. For some reason I feel like it needs to be shorter in height for skinning and piercing through the fish when butchering lingcod. As for frequency, luckily I get to process 20 or so fish a season. Not so worried about portioning. Maybe I should attempt the next fish wi...
