Re: WTS a few knives

Next up guys is another 240. This time it's a moritaka as. I've had this knife for a bit and it is one of my favorites. Just don't reach for it much. 47mm tall 241mm length 6.2 oz weight This knife is definitely used but still has tons of life left in it. KU has worn about half way. Tomatoes seems t...

Removing Mazaki handle?

Looking for some advice on how to remove a handle, any handle, that looks as if it's glued. My Mazaki has a nice d shaped handle with a buffalo horn ferrule I would like to save for something else maybe (if it's possible). Just worried about damaging the tang by hammering off. Thanks and can post pi...

Re: Sharpening Gear Questionaire

I think soft and hard stones need to be better delineated as well. I like soft stones that generate lots of mud, but that does not mean the abrasive is softer - just the binder. They do cut a bit slower in general, but I took a very soft finishing stone to a HAP40 knife for another one of the cooks...

Re: What did you cook today?

Oh and timos, do you brine your chicken before smoking? I find that that helps tone down the smoke as opposed to doing it "raw".
