I'd recommend a strop with some good diamond spray/paste before a higher grit stone. Higher grits are great/necessary, but I see more results out of a strop than my higher grit stones. I tried for a while, but didn't really get any benefits from it. But I'm not an amazing knife sharpener to begin with. If it can shave armhair going with the grain, I'm happy.

Rust risk on carbon knives is a bit overplayed IMO. I live in a humid environment and have never dealt with rusting unless a knife sat dormant for over a year. Though I do utilize silica packets for my knife storage.

I always force the patina immediately with some mustard. I typically like to give it a nice pattern, like a feather effect or something. Then I never worry about the knife developing a patina lol I like natural patina, it looks cool. All of my knives have a fingerprint patina where I pinch grip too...
