The 240 has sold out so seems it still quite popular. I've used the shorter 220 for couple years and it remains a personal favorite and regularly used.

Ha, it was I who shared that photo last year. Still works well.

And I'd recommend the black rubber sleeved bar over naked steel, for the latter can be rough and almost too strong.

Obviously it's your decision but stainless-clad carbon really is not all that difficult to maintain and you're shutting out a good number of options. Something to consider.

I typically use reverse sear for prime rib roasts (finish in oven at 500F+ for 10 minutes) but hadn't tried on a typical steak before last night. I used my Thermoworks Signals which allowed me to monitor the oven temperature accurately. Set at 170F, the temperature fluctuated between 140F and 180F....

I've tried the Miyabi. It cuts pretty well out of the box and has decent F&F but far too handle-heavy for me; the balance point lies behind the heel, at around the bolster.

Last, but by no means least....My Konosuke Gyutos. Unreal, Ray. Do you know of anyone with a bigger collection of Fujiyamas? I believe Omega has the ultimate collection. But I'm not competing with anyone. I have these knives because they make me smile every time I use them. I'm a collector for sure...
