It's a Sukenari ya?

I think I have both those knives in the drawer right now.
Pretty sure that is a Masamoto KS
Yes, it's a KS. Honestly, I'm surprised that they're still in stock. Makes me feel a little dumb about leaping at it.

My wife is massively forgiving.
Wowza! Those are two "can't go wrong" blades. Congrats!
And, I barely got in any trouble! Worth it.

Re: Custom handled knife

Nice dude, hows the knife!? Very typical Tojiro. It's a nice blade that's a little rough around the edges. The handle is obviously fine, but I'll probably wind up taking the edges of the spine down a bit. I'm REALLY liking the profile on it. It comes down to a nice point, has a nice sized flat spot...

Re: Custom handled knife

Hopefully you'll dig yours! The knife looks awesome btw. So, my impressions on the handle. I'm pretty much used to just ho wood, or rosewood handles, so the material of the handle has a very different feel. I'd equate it to more of a high density resin instead of a plastic feel. Honestly, it remind...

Re: Custom handled knife

Interested to see what you think of that handle OP. I got a very similar handle on a bunka and it looked nothing like the pictures, I hate it. It feels cheap too, to the point it's turned me off these custom handle knives. That's a bummer. I'll probably be getting it on Friday. I'll have to fill yo...

I don't have that good of a poker face and my wife knows it...
I think I'm just going to start talking about it, throw out a bunch of words that she doesn't know, and wait until her eyes glaze over and she stops trying to pretend to be interested.

Custom handled knife

My wife and I really needed a new bread knife, so I nabbed the $20 Tojiro. But, of course, I had to add on to get free shipping. I was looking at something cheap, like a Daovua, but that Tojiro custom 210 (https://www.chefknivestogo.com/towh2gy18cu.html) kept calling to me. I feel like the patina th...

Hammered for a staggering $231,250 incl premium
Unbelievable. You could buy a small house in Madison for that kind of money.
I think I've also spent that much on beer at the Essen Haus over the years.

Sucks they have to do this. Hopefully it fetches a good price, would be cool to see it go back to his daughter.
I'm not sure that they HAVE to do this. It sounds like half of the proceeds are going to his daughter and half will go to setting up a scholarship at the CIA.

 Sometimes I catch my body swaying back and forth
Oh yeah, I do that. I find myself moving my whole upper body back and forth instead of just my arms. Probably not a good habit. I suspect I picked it up from driving the sliding table on the bandsaw at work with my hips.

I find I'm more consistent if I'm not adjusting my pressure while moving back and forth. Hi there Gregory & Jeff. Interesting & sounds s...

Re: Push or pull

I started edge trailing, because I got burrs more quickly that way, but now, honestly, my pressure is pretty much the same on the leading and trailing strokes. I do a few very light edge leading at the end of each stone.

Call or message Ken. His number is in the signature of his posts. If you call, leave yourself a large block of time to talk. The first time I called him, it was 30 minutes, which is basically an eternity for me on the phone. I HATE the phone and those 30 minutes went by in a flash.

From what I was able to glean, ATS-34 will probably beva bit more wear resistant, AUS-8 a bit more corrosion resistant.

Re: Trying for a 240 mm Gyuto

If you want to keep rocking, the Harukaze AS has a lot of belly.

Again, you'll still want a sturdier knife for the heavier work. There's a reason why, despite my Japanese knife collection, I still have an old Sabatier carbon on the rack.

Re: Harukaze G3 Nashiji Gyuto

Just received mine today. I gotta agree its a hell of a lot of knife for the money. Its nice & thin. Has a decent flat spot, with an acceptable up-sweep to the tip. There is an interesting wave to the entire spine. Almost like a texture. Fit & finish is surprisingly well done for the price. This is...
