Re: Looking for our next favorite knife

To add, I had Mark send the Kurosaki Fujin AS 210 to compare with the VG-10 version. Both are excellent, but my VG-10 is ground thinner and definitely edges out the AS that I tried in performance. There can be differences between each sample in a particular knife model, so keep that in mind. I don't...

Re: Looking for our next favorite knife

Hey Mike, I've been away from the forums for a while. I do the Quick Look product videos for Mark. I rarely keep (purchase) one of the knives Mark sends for videos anymore, as I have plenty of awesome knives to choose from as it is. I did keep the Kurosaki Fujin VG-10 210 Gyuto - it's a fantastic pe...

Re: Looking for Workhorse Gyuto

Ditto on Mark's Yahiko Sanjo W#2 recommendation. Those are some of my favorite knives right now - excellent performers with some decent stiffness. These are all reactive blades if that makes a difference to you. The other caveat on these is the edge retention compared to Aogami #2 or AS. It sounds l...

Re: Hi Joe - posting today

Hey guys,

Sorry for my lengthy absence.

I fixed Joe's handle forum yesterday. You should be able to post on it. I had Mark put one of his handles on a Yusaku 210 Gyuto and it looks awesome!

Re: Quick Look Round 54 Videos

Thanks Jeff. It was a pleasure meeting you and the other CKTG forumites in Chicago. Good to put faces to forum names. Drewski, the Yahiko AUS-8 Western knives were a very nice surprise. Their performance is excellent with thin tips and edge grinds. The design and F&F on the Kanjo ZDP-189 line was ex...

I met Joe in Chicago at the meetup. He's a really nice guy and an excellent craftsman. We selected three of his handles for a video and they are very well done.

Re: Quick Look Round 49 Videos

+1 with Mark's comments on the Makoto SG-2. It doesn't perform quite like the Takamura R-2, but yes that handle is cool looking and very durable. The handle size reminds me of the Takamura. @Bob Z - are you referencing one of my lame cutting videos :-). I'm better now that I used to be, but not a sp...

Re: Quick Look Round 49 Videos

You can probably tell from the video, but I was super impressed with the Kohetsu HAP40 Wa Kiritsuke/Gyuto 240mm.

I was also reminded that the Anryu B#2 Hammered knives really are such a solid performing line - always great on dense product :-).

Re: Thoughts on quality between Takayuki Kengata and Masakage Koishi

I think the Koishi has a more handmade quality about it, with little touches like hand chiseled Kanji and nice polish on spine and choil. The Koishi takes more care and attention to good technique IMO as they can be quite thin at the edge and the steel is very hard.

Re: Which Bunka

Keith, I own or have used quite a few Bunka knives and I think as Lepus suggested the Shibata R-2 Bunka might be right up your alley. The Anryu B#2 Hammered Bunka is a very capable knife, but the Shibata is more of a true laser performer with excellent edge retention. From your technique description...

@Bensbites, I have a Makoto W#2 High Grade 240 Gyuto in for video right now. I haven't used it and will be sending back as new. I'll PM you when I ship them back to Mark so you can look for the re-stock on Qty 1 :-). Who knows, maybe you can work out something with Mark on getting this one.

Good to see you back also Jeff!

Yes, I was going to mention Makoto Kurosaki as well. The high grade W#2 line is very, very well executed indeed. The ONLY knock I can give my Makoto HG 210 W#2 Gyuto is to take off a few marks for average food release.

Re: Favorite New(ish) Brands on CKTG

Welcome back Chip :-). I've been absent as of late as well due to a new job. Hoping to get more time on the forums. Let me noodle on that one - great question! I don't know if you have any experience with the Shibata knives, but they excel at making knives in their preferred style. Light, thin, but ...
