+1 with Mark's comments on the Makoto SG-2. It doesn't perform quite like the Takamura R-2, but yes that handle is cool looking and very durable. You can probably tell from the video, but I was super impressed with the Kohetsu HAP40 Wa Kiritsuke/Gyuto 240mm.

I was also reminded that the Anryu B#2 Hammered knives really are such a solid performing line - always great on dense product :-).

I think the Koishi has a more handmade quality about it, with little touches like hand chiseled Kanji and nice polish on spine and choil. The Koishi takes more care and attention to good technique IMO as they can be quite thin at the edge and the steel is very hard.

Keith, I own or have used quite a few Bunka knives and I think as Lepus suggested the Shibata R-2 Bunka might be right up your alley. The Anryu B#2 Hammered Bunka is a very capable knife, but the Shibata is more of a true laser performer with excellent edge retention. From your technique description...

@Bensbites, I have a Makoto W#2 High Grade 240 Gyuto in for video right now. I haven't used it and will be sending back as new. I'll PM you when I ship them back to Mark so you can look for the re-stock on Qty 1 :-). Who knows, maybe you can work out something with Mark on getting this one.

Yes, I was going to mention Makoto Kurosaki as well. The high grade W#2 line is very, very well executed indeed. The ONLY knock I can give my Makoto HG 210 W#2 Gyuto is to take off a few marks for average food release.

I've owned the Megumi VG-10 240 Gyuto and still own the R-2 Shizuku 240 Gyuto. I've also used the 210 versions of each. To add, the Anryu B#2 Hammered Honesuki is really sweet. If I were to buy a Honesuki this one would be right up there at the top of my list. ...and any Masakage Koishi knife is always a treat to see in person. They are just bad-ass :-). I tell you what Lepus - the performance of the Kohetsu VG-5 Tsuchime knives always impresses me. They are a true sleeper on the site. The grind and thinning they are putting on these knives makes them perform like full on lasers. The Makoto High Grade Gyuto is also a very impressive knife with excel...
