I've got one of his 180 petty's from JNS circa 2018 and I can't rave enough about it. They're out there to be had on the secondhand market if you're looking, have a bit of patience, and a bit of luck. Make sure the profile is what you're looking for since they can be across the board.

If the shipping is the same as the CKTG plate I'd just toss the cash at the Atoma. I've had both and for flattening I haven't found any real difference but if the prices difference is as negligible as it looks like the durability as well as the versatility of the Atoma would win out for me.

Thanks for an excellent review! I really do appreciate using coarse stones. The 220 is an excellent choice. For even more speed I also like the 180 and 120. I always was partial to the wavy scalloped Vic/Forschner for bread. The wave of the blade allowed for knuckle clearance aplenty and the scalloping was more gentle on crumb while letting you get through any crust.

+1 on a longer gyuto over a sujihiki or yanagiba. You'll just get far more use out of them especially if you're a value and budget conscious home cook. As far as the petty, my parents have loved dearly the ps60 series knives that I've gifted them and they don't seem as able to hurt them as easily as...

Cck Cleaver, 700-1000 unless I'm bored. Western and cheapo no more than 2k, again boredom may increase this. Fancy pants gets 3-8k synthetic and or natural to awasedo.
