Re: Mazaki knives

I've got one of his 180 petty's from JNS circa 2018 and I can't rave enough about it. They're out there to be had on the secondhand market if you're looking, have a bit of patience, and a bit of luck. Make sure the profile is what you're looking for since they can be across the board.

Re: Anyone change careers into a kitchen later in life?

I left a very good job in the maritime industry to pursue culinary dreams at 36. I enrolled in school and found myself working everything between a scoop and serve place to Modernist Cuisine where I helped finish the MC at home book as well as doing the lab dinners. Though I wouldn't trade the exper...

Re: Another Stone-Flattening thread! Shapton Glass questions

If the shipping is the same as the CKTG plate I'd just toss the cash at the Atoma. I've had both and for flattening I haven't found any real difference but if the prices difference is as negligible as it looks like the durability as well as the versatility of the Atoma would win out for me.

Harukaze looks very similar to my Akifusa, anyone handle both?

My friends love my Akifusa and want to buy a copy of it, but the price of it's nearly doubled since I've bought it. I've been looking around for them and the Harukaze PM look to be very very similar. Weight, profile etc. If you've had any experience with both these knives or have other recommendatio...

With the possible exception of a flattening plate though going outside to the sidewalk is an option.

You still liking that Etsy stone huh? I’ve been thinking about getting one but can’t quite make myself do it.

Re: Nubatama Green Ume 220 brick

Thanks for an excellent review! I really do appreciate using coarse stones. The 220 is an excellent choice. For even more speed I also like the 180 and 120. For coarser work , the 60 and 24 grit stones are excellent choices when you really need to move some metal. The tri-hone type stones are notor...

Re: Got my first taste

Another great place to play, Meals On Wheels. We did a stewardship thing for work one day and I ended up doing 4 hours of veggie prep with their knives. I told the girl I should have brought mine and she told me I was welcome to anytime. She told me I didn't have to do it through work at all, I cou...

Re: Got my first taste

I always was partial to the wavy scalloped Vic/Forschner for bread. The wave of the blade allowed for knuckle clearance aplenty and the scalloping was more gentle on crumb while letting you get through any crust.

First kasumi polish, questions, tips and expectations?

I'm working on my first try with getting a kasumi polish. The knife is a Makoto and I'm still working on getting the bevels totally flat. As I embark I'm curious mostly right now about how long I may expect to spend trying to get to my first polish. I know that I should keep my expectations limited ...

Re: Nubatama Green Ume 220 brick

FWIW I was greatly helped by just committing to some "coarse stone courage" and going for it with the really coarse stones. Peter Nowlan really advocates it and I've found as long as I really back off the pressure with them I'm very happy. I often start with a SP320 and if I've got some re...

Re: Help a customer buy several knives.

+1 on a longer gyuto over a sujihiki or yanagiba. You'll just get far more use out of them especially if you're a value and budget conscious home cook. As far as the petty, my parents have loved dearly the ps60 series knives that I've gifted them and they don't seem as able to hurt them as easily as...

Peter Nowlan thinks highly of them if I recall correctly. I'm sure you can search thy forum and find some of the other Canadians discuss it.

Cck Cleaver, 700-1000 unless I'm bored. Western and cheapo no more than 2k, again boredom may increase this. Fancy pants gets 3-8k synthetic and or natural to awasedo.
