I would take one. It would be cool if you could get konosuke to make it out of hap 40. I actually prefer the swedish stainless over the hd2, slightly, for edge retention and sharpening.

I have had both. I still have the ken onion edition. You get wider belts and the ability to adjust the speed of the belt. I believe the ken onion edition is worth the extra cost. I'm ambidextrous cutter, but it was out of necessity being left handed. I don't know if I would have bothered practicing with my off hand if it wasn't necessary. Even after all these years of using both hands, the more precise I need to be the slower I am with my right hand compared to my left hand....

I'll second Cutuu's response on the Konosuke YS in 240mm. I used it for the whole week of Christmas making Breakfast, lunch, and dinner for my family (20 adults 14 kids). I just use a 150mm petty. If I need to do work that requires a parring knife I just choke up on the petty.

The anryu is a great choice.

I think any of your choices would serve you well. You just need to decide how much you want to spend and if you like the way it looks. Out of the 300mm I would favor the Masakage slightly over the moritaka. Out of the 270mm I would favor the anryu, for wha it's worth.
