I probably overpaid a bit for this bottle, but they’re so hard to come by out here that I couldn’t really pass it up. https://i.imgur.com/ktc1EKn.jpg Is this different than the one they sell at costco? They don't always have hibiki in stock, but I was able to grab a couple during christmas edit: nv...

Could you take a picture of it with its belly flat on a cutting board? The first picture makes it look like there is a curve there

Re: Takayuki Asks a Question

The English label is indeed a mark of big box store knives - they don't look like traditional Japanese knives. If you want an English labeled Japanese blade, you are probably going to get a Mac. There is an asthetic thing to most of us - and I don't know of a high end J knife that has an etched Eng...

Re: PIF: Buffalo Horn Rolls & Stock Handles

Are there are good resources/videos on how to make a handle? Maybe I can give it a shot at some point, haha. If you check the old forum, Carter Hopkins did a nice tutorial (with some great photos) on how he makes his handles. in that case sign me up for #13, the local woodshop sells nice blan...

Re: 1st stone

For a single stone I've only used the shapton 1000, king 1000, and chosera 800 in the 1 and done range. from those I'd def say get the chosera, slow dishing, splash and go, comes with a stand, and not outrageously priced.

Ahh I want this, but can't really justify it when I only use cast iron for searing and baking/pizzas sometimes.
