Re: Help Needed: Masakage Yuki Edge Retention
I totally understand your situation. I got a Yuki 150mm petty a few years ago. Edge retention was really bad. I found myself working it over multiple times per month. I could get it sharp, but it would fade, severely, sometimes during the same meal prep. I tried a lot of different combinations of s...

Re: Help me find a Big bad prep beast!
Takeda! First thing I think of when I hear "Beast". Takeda are very particular, you will either hate it or love it. I'd find one that I know I'd like before trying one. Why on earth would anyone hate a Takeda? They are known to wedge. Its on a knife by knife basis tho. The older grinds we...

WTB 240mm iron clad Watanabe/Toyama, KU mazaki
Hey CKTG, I recently got the stainless clad toyama from JNS and wanted to try out the older iron clad version since I've heard its a little heftier. If anyone has one sitting around they aren't using, I'd love to take it for a spin. Also interested in KU Nashiji mazaki's if anyone has one. I'm locat...

Re: Wanting to dip my toes into 'better' knives - home cook
I would go toward 210mm for your main gyuto. It may seem large at first, but youll get used to it, especially with a pinch grip. I've seen some decent reviews on the shinko's recently but they are fully reactive and seem to be a little thick at the tip, but a simple fix with some whetstones. I'd go ...

Re: How to rescue a chef knife?
Should be an easy fix with a coarse stone, the tip is probably a loss. For now, try sharpening and thinning to fix the edge as evenly as possible, then see how much of the tip is still bent. the remaining part, just take off from the spine, rather than the edge, that way you retain the profile of th...

Yeah, I’m thinking I may need to upgrade. O...
