Working on a spec 180mm Nakiri in 52100. The handle is Dyer oak with horn and nickel-silver, the saya is also Dyer oak.

This is a 215mm gyuto made of 52100 carbon steel (63 HRC), the height is 45mm. The handle is maple burl with copper and buffalo horn. There were many great knives produced by many makers, but I don't think there is an overall line of knives, different style blades and different steels that can compare with the overall quality and performance of the Konosuke Fujiyama line. I have always used the Pepin method using a firm whack and the side of the blade. I first saw the jar method from Jose Andres....I remember thinking it was very cool...I have never tried it, but will give it a go.

Here is an article on 26C3 from Larrin Thomas, he is Devin's son. Devin refers to 26C3 as "spicy white". It is a carbon steel that is capable of a fine molecular structure, high hardness, and will reveal a hamon when differentially hardened. For me, as a maker, I can take it 2-3 more point...

Many times when I ship international, the USPS tracking indicates delivered once it hits customs, and then most times, no further tracking info is available. USPS has never lost a package for me, and they are cheap, and have less paperwork to fill out (than USP/FedEx), but I have had several anxious...
