FS: Brand New Suisin Inox Honyaki IH Deba 180mm
Hi all, Looking to sell an unused Suisin Inox Honyaki Deba, 180mm. My favorite deba to use in my kit, I bought a second one as a backup when it looked like I'd be taking a job cooking on a boat (salt water) so now I'm looking to pass on the unused one. I can tell you from my used one that suisin's s...

Re: Teriyaki advice needed
No problem, yeah Oto's is an amazing resource, you're really blessed to have a market like that close by. You can find any common and many uncommon Japanese products and ingredients there. While you're there, pick up some kewpie mayo, it's delicious. You could also get some koji to marinade your chi...

Re: Help selecting 240 gyuto
If reactivity isn't an issue for you, tanakas b#2 have excellent grinds. They do vary a bit from vendor to vendor from what I've heard in regards to fit and finish but the handle isn't much to speak of anyway.

Re: Teriyaki advice needed
Where do you live? Teriyaki sauce is typically just sake, mirin, sugar, and soy. As far as cooking goes, most sakes will be fine, but I use hakushika chokara, or tanuki or hakusuru work fine in a pinch. Ozeki/Shochikubai is readily available and absolute garbage to drink but okay to cook with. Mirin...

Re: Favorite Cookbooks and/or Kitchen Related Literature
Just picked up some culinaria books, they're fantastic. I also love cruising the goodwill book sections for cookbooks I wouldn't normally gravitate toward since the format has changed so much over the years. Cooking by Hand - Paul Bertolli probably my favorite Bombay Palace Cookbook is a really good...

Bill Burke dragon's breath 265 gyuto, whatever grind he wants, same-ish profile as a spear-tipish fowler I own.

Re: Debas and funayukis
Color me confused. I know funayukis from Carter, and his are nowhere close to being deba like. I find deba to be immensely useful for fish breakdown. The fact that they are task specific means that they are always ready to be used for a task that demands clean cuts with little waste. I like the blad...

No doubt, try your first J knife again (for me a Mac 270) or a little used yanagi or something like that.
