Traditional kiritsuke are single bevel and relatively specialized knives, the double bevel versions are sometimes referred to a kiritsuke gyutos. Those are all good choices and 16" x 22" is a good size if you are able to leave it out. I haven't had problem with Maple staining but it is arguably too hard, my vote would be for Cherry or Walnut and no juice groove (a waste of board real estate IMO).

I have a Kanehiro AS gyuto and it is an excellent knife. I don't think you'd go wrong withe either the Masakage Koishi or Kanehiro bunka. As someone who typically hates wild handles I rather like that one, maybe it is because it isn't a Japanese knife, per se. Can you tell us more about the knife: rocker curve or large flat spot? weight? spine taper? heel height? It seems like a steal at that price.
