Are you familiar with a pinch grip? I think that would solve your pinking/index finger issue and will let you use a 210mm(8") knife and give it closer to a 160mm feel. Longer blades like the 210mm tend to give you more heel height over a 160mm and a taller heel will help with knuckle clearance...

I've got a couple of Matsubara blades (both B2) and they are in rotation as often as anything. The go where directed, take and hold a great edge, and cut like beasts. I really like the 210 as it's really tall (55mm) and I have big mitts, so it is about the only 210 that goes out of the house.

The binder in man made stones is what makes them soft or hard. The grit stuff is almost aluminum oxide or silicon carbide. Both are much harder than steel.

Until you are a skilled sharpener, I would steer away from HAP40 steel. I often finish knives at 3k, so this might not be relevant to you. I notice that stropping after 3k makes a noticeable difference on how smooth the blade will slice through newsprint. I think you need to look closer. My mom gave me her Belgian Bleu stones - she used a Bleu on all of her (now my) Sabatiers, and they are about 3-4K grit, and used a Coticule (yellowish color - about 8K) one on some of hers. Ben - what cutting style(s) do you prefer? Do you rock, chop, push or pull, or all of them. Different profiles have different uses. I like Sabatier profiled knives (French/KS kind of stuff) as they can do it all, but if I was to pull cut (soft proteins and veg) I would get a knife that was different...

Unless its a Yanagiba, would never go higher than 6K. Barely go to 6K anymore except for looks, I'm in the 3-4K camp.
Most of my daily drivers are 6K or better - I'm in the 6K min camp

I can't let this go without recommending a Nubatama Bamboo1200 - kind of a more refined big red brick. Very fast 1200 stone, great feel, I like it much better than my other 1K stones.

I am still using an old 2 1/2" (60mm) Sabatier nogent blade - gets very sharp and since I don't use it much, it does fine. Triangular blade with a very sharp heel - probably about 2 oz as well. I view a 150 petty as kind of a short on the board knife for trimming stuff
