Re: Favorite food & bev pairings

I love brown ales with a nice medium rare steak. Something about that nutty grainy flavor enhance the rare part of the steak especially.

For some reason Ive never liked pizza and beer, Its got to be pizza and a coke for me :)

Re: Recent Work

It seem to be the consensus to go with the interrupted quench doing w2 for sure, most of the people I have talked to will only bother doing white#1 with water.

Re: is my knife badly heat treated?

It does sound like it could be a burr that is folding over or it could be steel that was not hardened up to its potential. Ive owned a few white#1 yamashins and although the steel does loose its bite quick I dont think it was as quick as you are describing. Not that you want to take a file to the ed...

Re: Best Steels you've used?

a big difference between knife performance that isnt just about wear resistance is the way it is constructed. A mono steel blade properly heat treated wont bend, and take a set like the clad knives will. So for something like crushing garlic, you will wanmt to use a mono steel knife not a sanmai sty...

Re: need testers/feedback

Hi guys, both of these pass around knvies ....the 165mm nitro v petty and the 250mm 15n20 blade are out and about. feel free to PM me your assessments or post here. Either way is fine with me. These are both experimental blades , so dont hold back on your criticisms. I thrive off of it :)

I have been using the felt guards, I started shipping my blades with them too. They work well for protection and do not mar the finish either.

Re: Chicago Knife Show

ahhh, thank you . I did not see that. Theres got to be a million awesome places to go that saturday. The chocies are truly overwhelming. This will be my first visit to the city since I was about 12. All I remember from that trip was the winding river and the field museum.
