I would love to see some knife skills! Doesnt have to be a competition , maybe just instruction...Im Like Jeff B I suck at cooking and I have no knife skills :)

a big difference between knife performance that isnt just about wear resistance is the way it is constructed. A mono steel blade properly heat treated wont bend, and take a set like the clad knives will. So for something like crushing garlic, you will wanmt to use a mono steel knife not a sanmai sty...

Hi guys, both of these pass around knvies ....the 165mm nitro v petty and the 250mm 15n20 blade are out and about. feel free to PM me your assessments or post here. Either way is fine with me. These are both experimental blades , so dont hold back on your criticisms. I thrive off of it :)

I have been using the felt guards, I started shipping my blades with them too. They work well for protection and do not mar the finish either.

ahhh, thank you . I did not see that. Theres got to be a million awesome places to go that saturday. The chocies are truly overwhelming. This will be my first visit to the city since I was about 12. All I remember from that trip was the winding river and the field museum.

Nitro V is alot like AEBL, just maybe a bit more wear resistance (higher attainable RC hardness) and AEBL is considered a stainless version of a simple high carbon steel like 1084 and 1095 and 1095 is considered to be pretty similar to white #1...and so on...you get the idea. looks to be about 30$ right now to grab a 4 person uber car from o'hare to roka akor....but about 45 minutes to drive 16 miles....hmm

Hi Drewski, You can learn a lot from checking out the vendors of these steels. Z-Knives also has a very comprehensive database. http://www.zknives.com/knives/steels/steelchart.php These are the guys that supply the domestic knifemaker market and many of the big MFGs as well. There are more of course...

There is some really cool looking places to stay on air bnb. Im very close to booking flights for my wife and I, just have to figure out what the scope of our trip should be. I would love to bring some stuff if it is going to be more a knife show for both Japanese and American guys.
