Re: Buying philosophy for knives

It's not just the efficiency, it's the pure pleasure of using something that is amazingly sharp. Great cutting instruments are incredibly fun and rewarding to use. I've seen some scientific speculation that love for sharp knives is partly innate - built into our genes, so to speak - since knives ar...

Re: Mystery knife build: What steel?

W2 has alloying somewhere in between blue#1 and #2....so consider it a western blue #1.5 ? maybe? Personally i like 1095 the best , its the most fun to use, sharpens easy, very keen, and cool reactivity. W2 is less reactive.

Re: What is the most expensive dining out experience you have ever had?

Wife and I have spent $150 or so, it wasnt upscale exactly but very fresh seafood in Cape Cod. The problem was we did that for breakfast lunch and dinner. that was an expensive day, the kind of day mastercards live for :) I think Ive paid it off by now but there is really no way to know....lol. I am...

Re: Speaking of wide bevels...

Hmm, yes maybe the Takedas get a little too thick up top. Spence, what is your process for breaking down the cabbage if you dont mind me asking? I would think there gotta be a clear winning geometry for something as common as cabbage. Youve got me thinking now, what would be the absolute ideal geome...

Re: Speaking of wide bevels...

I would think a takeda would be pretty awesome vs lots of cabbage no? Good height, wide bevel, that concave shape for food release, as long as the secondary bevels are sharpened proper...what could be better?

Re: Forced Patina

I get a pretty stable patina using mustard. I dab it on with my finger over the whole blade. Try to get a pretty even consistency. let it sit for at least a few minutes. rinse, dry, repeat until you are happy. You can experiment with time and thickness, brands of mustard, or even other condiments yo...
