Re: Suehiro Debado 3000 (NO. 4000 SNE)
I'm starting the rough draft on the 6k tomorrow. :) [/quote] Looking forward to it! I’m curious about your hunch on the 1500 stone. As you know I’m new to freehand and I’m at a place in my journey where I’m asking myself “why would I use/benefit from X stone?” In my current progression I have the 40...

Re: Suehiro debado
I like a lot of bite on a honesuki and use a natural Mozen-to for this, which is like having both a 1k and a 3k in one package. Were I going synthetic I'd be looking for something that leaves a more aggressive edge. Synthetic Akamon, King 1200, shapton pro 1500 etc. But that is just based on my pre...

Re: first time sharpening “good” steel
...I’m actually a big axe enthusiast. I’ve been doing restoration and collecting for a few years now. I’m not sure if you’ve heard of the group axe junkies but I’m fairly active member there. --- Got a link? I am a http://hultsbruk1697.se,Hults Bruk fan. Just head over to facebook and search “axe j...

Re: first time sharpening “good” steel
I wanted to gear this post towards the novice knife sharpener, such as myself. I’ll be using terms in the way I understand them so correct me if needed, I’m here to learn. As of recently I acquired my first two whetstones, the chosera 400 and 800, after learning on a near pocket sized stone from ac...

Re: first time sharpening “good” steel
When starting this journey patience is probably the most important thing that will see you though to the break through. You did well and congratulations, but remember, there is oh so much more in front of you too and it only gets better. ;) It absolutely is, learning to take my time and making mist...

Re: You know you're a chef when...
Can you remove the stale air in the walk in?... here’s a trash bag :) We need a dough repair kit. Can you run to kitchen and company and grab one? “What’s that you’re eating?” (cookie shaped thing in a paper towel) “here try it.. it’s a chocolate cookie” (spent espresso puck) that one actually got m...

Re: Suehiro debado
Wow didn’t expect this kind of reception to my obviously amateur questions and remarks lol. I’m going to attempt answer you all as best I can. Mark, thats something I never gave much thought because you hear a lot of talk about binders when it comes to Naniwa, whom I’ve been doing most my research o...

Re: Suehiro debado
You are asking about some incredibly nuanced information so I will give some fairly nuanced feedback. Grit rating correlates with abrasive size rather than polish. It's a bit unfair to Naniwa to suggest their grit ratings are misleading. Naniwa stones are tightly and to my understanding correctly g...

Re: Suehiro debado
I bought the 320, 1k and 3k here when they came in, I was in a buying frenzy and trying many new stones. I liked them enough I pulled the 6k in straight from Japan just because I was never blessed with patience. I like the Suehiro Debado Stones, they have a very practical base, even though I wish t...

Re: Suehiro debado
It sounds like you've developed a nice base for sharpening. One big lesson when it comes to sharpening Dan, if your knife isn't sharp off the lowest grit stone you start with then don't move to the next stone. Higher grit stones won't fix the mistakes you make or lack of work on the lower grit ston...

Re: Suehiro debado
Thanks so much guys! I entered my email a couple weeks ago for the notification, it’s good to know that these will be available here in the US. On paper it looks like a great competitor to the chosera line but there doesn’t seem to be much info on their preformance. I love my 400 & 800 cho’s, I’...

Suehiro debado
Hello, this is my first time joining a forum so please excuse me if I have missed any information searching for an answer to my questions in the threads. Anyway, I recently bought my first two whetstones- chosera #400 & #800 (with base) and I would like to progress to a 3k. I’m considering purch...
