Alright, mine is not quite a complete knife yet but it’s close! Here’s my black lotus just before the handle gets glued up. It’s a big feather Damascus 275x57 with gidgee handle and saya. Simichrome. That stuff is amazing. And not abrasive like flitz and some of the other polish people use.

You could also try rubbing alcohol if it’s just something stuck to the blade and not tarnished

Ha! Just commented on the steak thread about this. My wife picked one up for me I think. We’re moving soon and losing the oven with a built in probe. I’ve become so dependent on that thing! Hope this works out just as well

I haven’t found a better tool for scrambled eggs

Yeah, that’s basically the case. It’s ever so slightly S grind on the left. Hard to capture in a photo but you can kind of see it here.

Raquin 255 KT Gyuto - SOLD!

Measurements are 252.5x49.5, 191g. Steel is the standard Raquin 145sc with kurouchi finish. The grind is what Raquin calls his kitchen tractor. Handle is stock burnt oak I believe. I have a 270 W1 and had a 240 B2. In my examples the 270 is a lot thinner than the 240. I’ve seen other claims that the W1 blades are thinner than B2. I have no idea if that’s generally true though. I know my 270 got a lot sharper than the 240 and it was a lot easier to get it there. Is that because...

I typically use reverse sear for prime rib roasts (finish in oven at 500F+ for 10 minutes) but hadn't tried on a typical steak before last night. I used my Thermoworks Signals which allowed me to monitor the oven temperature accurately. Set at 170F, the temperature fluctuated between 140F and 180F....

Anryu B2 is another nice one. Also, it’s a little tall for a petty so it functions a little better on a board than some. I have one and it’s great. A little flashy but not over the top.
