I’ve slowed down on knife purchases, but I pretty much forced a good buddy to sell this to me as soon as I found out that he had it. Oh, that’s no fun. I had a wire shelf rip off the wall once in the pantry with all my pots and pans and stuff on it in the middle of the night. What a racket! One cast iron pan too many I guess. Hope your toys are ok :?

There is a Black Lotus Knife currently on Passaround. I liked the knife so much I ordered my own. Mine is 259 x 53. Jeff Steele is the talent behind Black Lotus, he’s such a pleasure to work with and isn’t scared to try anything you can dream up. This particular knife is thinner than the Passaround...

Jikko Akebono 270 from K&S! I’ve had this in my cart off and on over the last year. I saw the comments about the line maybe being discontinued so seemed like the right time to give it a try. That’s a neat handle. I don’t think I’ve seen one like that before. I don’t usually like cast/resin handles but that’s a cool one. Kinda reminds me of the eye of Sauron haha

Not my whole kitchen, but finally got this area set up like I wanted. I built the prep table out if 2x4s and fir tongue and groove flooring. Just got the Hi Soft board today. This whole space was previously unusable in my apartment kitchen, now it will be the most used. Looks great! Love that big k...

Thanks to Jon's post, I checked out a 52100 nakiri and it had a nice ring to it....a gyuto did not....not sure if the mounting and density of handle material makes a difference. Ha! That is kinda neat. I have two knives that do that. A daovua and a Carter Hopkins blade. Seems to be monosteel blades that do it but not all of them. Every time I use those I give them a tap.

I’ve tried both. I get consistently good results edge trailing. But like everyone said, it’s muscle memory and practice. You can get good results with both. Edge trailing is a little more forgiving though, at least for me
