Re: Tall Short Petty
Have you considered the Kuwabara?
https://www.chefknivestogo.com/sporforexsc.html
With plenty of higher end options here, the Kuwabara is the one we reach for lately.
It's MUCH better than expected. Does just about everything. Gets screaming sharp too.

Re: Still not happy with my Results

Re: New choil on the Kohetsu HAP40
Here's one I altered with a diamond burr and drill a while back.
I started out just smoothing rough edges and got to this.
For this little convex knife it's a huge improvement.
Fits like a glove now. (Takahashi)

Re: Which is correct: roiling boil or rolling boil?
From the tea world, that would be "fish eyes," full boil with big bubbles.
Barely boiling w smallest bubbles; "shrimp eyes."
A little further along but not full boil; "crab eyes."

I can vouch for the Takeda here. It's a great knife!
Extremely light as mentioned. Was always a NAS.

Yes controlled breathing will give you a better shot pulling a trigger. I'm sure some yogic masters can go into more detail on Pranayama breathing techniques for all of us :) --- Ken At least 2 years strong asana practice, preferably 8-10 years seasoned, is required before instruction on the basic ...

Re: Shohonyama Awase Toishi Pass Around
Great review Joe. I’ve been tempted to invest in a microscope for the same reason.minwatch a you tuber who is a stone fanatic and looks at Stone results through a microscope hooked to his PC after every 10-20 strokes. It’s amazing to see what the different stones do and I have to think it would be ...

Cosmetically the knives look as always. No extra scratches from sharpening if that's what you mean.
No change in contrast to speak of.
