Re: Deba Knife Size?

I guess what I’m asking is, is there a general rule of thumb? Is the length of the blade supposed to cover the distance between the dorsal fin to the spine? I was hoping someone here who has experience breaking down fish could share some insight. I’d like to be able to break down fish no bigger tha...

Re: How I convinced my wife I needed more.

I dont say anything to my wife. She watches me open the boxes and says another one? I say yes but look at this one, she looks and says, OMG thats beautiful. I say I agree!! Then I grab my new blade and make her something delicious to eat. We are both very happy. We also dont spend money we need for ...

Re: What is the most expensive dining out experience you have ever had?

There is a liquor store chain in Florida, ABC Liquors, it is not a state controlled store like the ABC stores we have here in N. Carolina. Anyway, they ran a bourbon lottery twice a year to coincide with releases from some of the bourbon producers like Pappy and the Buffalo Trace Antique Collection...

Re: What is the most expensive dining out experience you have ever had?

Most expensive meal was Bartalotta Ristorante de Mare at the Wynn about 13 years ago. $800 and something dollars for a 2 top and that is only food, no beverages. That was such a great restaurant. When I was fresh in the industry I used to love going to very expensive restaurants. After cooking profe...

Re: Over Compensating

This ended up unbelievably serious, beyond what I intended and to the point I feel absurd, but here we are. Cutuu, I'll send you a PM. I honestly thought everyone was respectful and considerate in their responses. Commendably so if we want to be self congratulatory. This is not the redacted thread ...

Re: Over Compensating

I don't think it was our responsibility to convince him. It was not my responsibility to convince OP, but it would have been my pleasure. That guy came here with a reasonable question. We might have been able to convince him to try a decent knife, or at least to sharpen better. He can now say with ...

Re: Over Compensating

You can win an argument or be correct and simultaneously fail to convince someone. As right as we may be I don't think we did a good job convincing him. I don't think it was our responsibility to convince him. I have good friends that are very happy going out to a nice dinner at Arby's (no disrespe...

Kit or perhaps just buy a can opener
You would think that would be obvious but it isn't for some. Some people use knives as screwdrivers too.
Your not supposed to do that? Thats mainly what I use my Masamoto KS Gyuto for.

Re: Over Compensating

I worked in a few small family kitchens in Italy where I learned much about regional cooking. I must be missing something here but most if not all the kitchen staff used what I would consider an inexpensive stainless knife that they beat to hell. If I told them about knives that cost more than say ...

No idea where they came from or what type of aoto they are either. :P It happens. Same with some unknown Awase-to too. Thank you Mr Craft!!! That is interest...

So is it normal then for some to come with no stickers, others to come with some stickers and the placement of the stickers to be different? What is the reason for this?
