If I had to pick one pattern for this job then for me the ideal one would be the Sabatier Saigner in 5-7 inches. Masahiro makes a similar knife in 140 and 150mm. Basically a straight boning knife. I agree, I have three of the CKTG 140 and like them all. Two full size and one edge pro size. I use one full size for synthetics and one for naturals and the little one is used as a slurry stone.

Eh, depends. I like something in the 215-235mm x 47-51mm range. The thing is that knives in that range may be classified as a 210 or a 240 so it really depends on the smith and the region the knife is from. But I think it is safe to say that if you are into knives you will enjoy many knives in the 2...
