Re: King Hyper 2k

I’m trying to find one over 210 long, 75 wide and Atleast 40 thick but would prefer thicker. I have one on my radar, I’ll know in a couple days if it’s mine or not. Have you sent an email to Sin? Just because you don't see it posted doesn't mean he doesn't have it. Mine isn't quite that big but not...

Re: Knife for steaks, pork, chicken breasts and brisket

If I had to pick one pattern for this job then for me the ideal one would be the Sabatier Saigner in 5-7 inches. Masahiro makes a similar knife in 140 and 150mm. Basically a straight boning knife. Though nice isn't really a word I use to describe either. More like utilitarian. No reason a 150-180mm ...

Shapton pro 1k and 2k. That is all I keep around my prep station for synthetics these days.

Re: Favorite kitchen scale

I have been through cheap ones at $10-15 for 11 lbs capacity. They break or chew through batteries. I hate when devices use button batteries when AA will do. I have been using the oxo scale for a while. AA batteries, removable SS weighing pan, and remote screen/dock. Typical oxo quality and you buy...

Hmmm..... Pre-move cutlery garage sale coming?

Just thought I'd ask.....
I am unsure at this moment. More likely stones than knives. All of my knives fit in a single 18 pocket bag (with room to spare).

Nice looking knife i wonder how comfortable is it with that handle?
Missed that. I find it comfy. :) Light, well finished but skinny which might be a turnoff for some.

Have you put it to the stones yet? If so how did it go?
I am going to send you a PM as I tend to be long winded and don't want to go off topic here. I will say that I like this knife enough that I will review it after a month or so of use. But the short version is "well enough".

Re: Top Three (Right Now)

Mmh, hard choice. Masamoto KS (250) If I could only have one J knife based on the knives I have owned thus far, this would be it. It just makes me happy to use. I do wish it was taller though. Well balanced, for me, grind that falls between a laser and a light-middleweight. Kono HD2 (235) This knife...

Re: Website - Finally!!

After way too much time and procrastination, I have launched my C II Bladeworks website. In addition to continuing my custom knife and handle work, I will be listing spec blades for sale on the site....the commerce side has all the standard protections. I appreciate the support that the CKTG Commun...

Re: Need advice: Comparing end-grain boards to synthetics

I would be curious too. After protein I lug mine to the sink and hit it with some dish soap/sponge. What ratio of vinegar/water are you using Kit? 50/50 but since getting the farmhouse sink I lug the board over way more often and do it up with soap and water. After I started scraping my boards heav...

Re: cross contamination between stones

I have a slight variation from Ken's that stems from not being overly concerned if I get some higher grit "contamination" on a lower grit stone. So if I was going to use say a sequence of 1k, 2k and 6k stones that I wanted to flatten, I would start with the 6k and get that flat, then foll...

Re: Flattening stones

I agree, I have three of the CKTG 140 and like them all. Two full size and one edge pro size. I use one full size for synthetics and one for naturals and the little one is used as a slurry stone.

Re: Sharpening/honing on the fly.

It really depends. I have a set of edge pro sized shapton glass that I keep in a small drawstring bag and can throw in a fishing/hunting/camping bag and have on occasion. Having said that, I've never really had much of an occasion to use them--lol. If I go hunting/fishing I normally go for the day a...

Re: 210 or 240 Gyuto? Can't decide!

Eh, depends. I like something in the 215-235mm x 47-51mm range. The thing is that knives in that range may be classified as a 210 or a 240 so it really depends on the smith and the region the knife is from. But I think it is safe to say that if you are into knives you will enjoy many knives in the 2...
