Help (finding knife owner)

Okay, I am embarrassed to admit this, I am usually pretty meticulous. About a year ago a well known forum member let me play with his vintage meat cleaver (I was looking for a re-handle project and have a thing for cleavers). It took me awhile to get the project done (first handle failed, then got a...

Re: Takayuki Asks a Question

I thought at one time they made a wa grand chef...but it still would not entice me to buy it. It is swimming in a sea of "like" knives and there is no differential component only misuno gets alot more air time. Heck, put a white Corian or red faux bone handle on it, charge triple and it may get more...

Re: WTS Ichimonji TKC 210 and 240 gyutos

Awesome deal. The 240 arrived today. Thank you for the nice packing job and quick shipping. I am not sure there is a better value than the knife I just got. If they are going to continue to sell these I think they will be my new rec for overall best budget knife.

Re: Looking for best food release knife.

Apples stick to everything...even my Doi. Have you considered using a 180 or 210 petty or something? The lack of height eliminates any sticktion issues.

So cool! Can you feel the scales of the pine cone?
I actually have a edc that has pine cone scales. You can feel it, but it does not wear. Mine has held up well to 5 years of abuse. Love be this material.

Re: WTS Ichimonji TKC 210 and 240 gyutos

Ichimonji is not the same as Kikuichi, I was hoping these TKC were the same as the Kikuichi TKC but they are different. They do share some similarities, I've heard it said that the Kikuichi TKC were a clone of the Ichimonji TKC, the Ichimonji TKC being the original TKC. I am not a font of knowledge...

Re: stainless v. carbon

Definitely no "issues" in maintenance, but it is maintenance. You cannot cut and walk away, or leave is a sink etc...it takes a common sense of respect with the tool. If others in the household don't have the ability vto take care of tools, then get stainless. There are certainly trade offs with eac...

Re: Doi gyuto 240

I did not realize Doi made a small petty.... I am more than surprised it is rough around the edges and there were grind marks, very uncharacteristic of a Doi. Are you sure it was a Doi petty? Anyway, my 240 is still in my rotation as a heavy user after a year. Cladding has calmed down considerably, ...

Just came across this stuff. https://www.starbond.com/black-heavymedium-ca-glue-kbl-500.html I have not used it yet, but I guess it is a black thicker CA glue. Maybe a possibility for handle cracks. I think someone was looking for something for cracks awhile back. Damn Matt....you cost me $$$ all t...
