Very nice work, where can one pick up some of your wa handles?
He does not post here much but is pretty active on Instagram. I think he has a round of premade going right now.

Re: Tanaka ironwood 240 gyuto

I met Rick Theory at an ECG a few years ago, he knew the ins and outs of the Tanaka brand and if I recall had open communication with them. He might be able to give you a definitive answer. I don't know his contact but his IG is: ricktarregrossa As a side note, I have one with no Kanji. I have been ...

I’m gonna withdraw this. I’m being told that it might be a Kazuyuki, if it checks out I think I’ll keep it.

Top Ten Kitchen

I have been home more in the last two weeks than the last 10 years. As a result, I have been spending a lot more time in my home kitchen than I am used to. I have a three kids and these are the current top 10 items I use. Looking back on all the "stuff" I have, I could easily eliminate half of it an...

I would take a Tanaka Nashi (stainless over blue 2) any day of the week for a great all round knife with phenomenal release.

Re: Show us your knives!

Chop Shop Mid-Tec from Chris Miller.

I have always wanted a denty, surprisingly, this is my first one. 52100 @ 210mm x 47 mm tall, came with the well executed saya.

I have not cut with it yet, but first impressions leave me feeling happy.

Re: New diamond stones

It looks to be very similar to the JKI stones, not in any way suggesting it is, just looks similar, about the same thickness/color:

As a side note, my 6k loads up fairly quick. I have a small cleaning stone I use between blades that really improves the performance.

Re: cleaver final profile

hmmm, interesting. So lets say my max height I have on hand is 3" somewhere between 6 and 7" would fit that ratio. Is this enough edge for cleaver duties? 3" is just not anywhere near cleaver territory...maybe for one of those little novelty cleavers you sometimes get for cheese, but for every day ...

Re: New diamond stones

Good grief, I am tired And staying up too late stressing...I read Niel Diamond stoned and had to see what that was about.

I don't know anything about the stones, but JBroida sells something similar that are my go-to. I will often strop on the 6k diamond for some bite.

I am guessing a world wide virus might slow things down...but then again, you may be rethinking Greece in May.

Absolutely possible. Just cannot be fill tang. Just shape the handle like a western handle. Don Nguyen, Dave Martell, Michael Rader etc...
