  • Serrated Steak knife =Paring knife
    Serrated utility/tomato knife=Petty
    Serrated Bread knife = Chef knife.

It drives me crazy. There is a small fortune in cutlery within hands reach.

Right now my favorite steak knife is a spyderco mule. https://www.spyderco.com/edge-u-cation/mule-team-project/ It’s profile is great for a steak knife. I used the DP for a while but it’s flat profile isn’t great for cutting on a plate. From your list I’d likely go with Kanehide Bessaku Hankotsu 150...

Your knife is a “Sandwich”. So across the top is a layer of carbon steel in the middle. This will darken with patina over time. As long as there is no red rust its likely fine.

I thought i needed a bigger suji. maybe i still do. now i realize my old suji was already a 270.. Crap. Guess now i need a 300 :P

In the first year Bank a huge portion of that extra salary. And no i dont mean invest in knives :) Try not to change your lifestyle just because you have a lot more cash coming in. After a year you can see where your at and make some changes but at least this way you have something to show for your ...

Thanks for the write-up. As a home cook, I have no real idea how crazy it is for you guys. Now i know for sure i never want a HAP40 knife, I enjoy sharpening way too much. I'd have to start using the glass cutting boards my wife keeps buying (that i keep hiding) if i ever wanted to sharpen the thing...

Placed 01/03/2014 Ordered a few edge pro stones.

It's been a deep dark pit since then. And only going deeper.
