Shuns are not that fun to sharpen. I have sharpened them up very nicely. But sometimes I think was a pita. Get something that sharpens up easier and see if you still don't want to sharpen like a kanehide tk nakiri. I didn't see a budget for you so I don't know what to quite rec.

I have the 165 and the 180 Shig KU nakiris. And the length difference and weight is very subtle. I find the 165 very useful and at times even better. Yeah, I agree with Kaleb and David basically. But I love mine and bulk prep it puts in work. But I can definitely see some people buying these because they r Fujiyamas and then them not being practical for them. Mine weighed in at 1lb.

Idk, I tend to have more extreme sticking issues with my middleweights than my lasers. With potatoes anyway. Not so much with heavyweights though. Yeah, each knive is an individual. I was making z generalization. When I test for stickiness, I go slow and just test the natural release. I count speed...

Yeah, lasers can have good release for lasers but that is still usually one/ perhaps greatest weakness. My kashima has some nice convexing and finish but it will still get sticky.

Looking back, If the kanehiro AS was one of my first jks I would have made an amazingly wise choice and been happy with it to this day. Wise choice imo islander.

I think your stones maybe might be your problem with those shibatas. I found the kashima to sharpen surprisingly easily. You might benefit from some that cut faster/better. The white steel is so easy like you said, you probably due fine with the stones you have. But for r2 maybe need something better.

How does AS compare to Ginsan? I'm wondering because the pricing between the two steels in the Kanehiro line is kinda interesting: for some knives AS costs more, while for others it's the Ginsan. Alright, I'll ask a couple questions:. How is the distal taper, profile, balance point. Overall feel nimble? Food release I would expect less than great?
