Re: WTS Shigefusa Kitaeji Wa-Gyuto w/ Custom Handle 240mm

 About to spend 1.5 honyaki on some coffee supplies so a touch more motivated. Nesspresso? What type of coffee machine you getting? Eyeing a Rocket. Oh no, you may have lead me to another rabbit hole. I'm a huge coffee drinker, but never thought to get something like that for my house... B...

Yes I totally agree Mark I would not buy those either, based on your same opinion. It's better for the edge to go to the heel.

Re: Chef Knife made from 9/11 Building Steel

This will be my one and only post on this topic. I worked at 2 World Trade in 2001. If someone tries to do something nice and help people it's a gift. The gift isn't always your favorite color. You might already have one. You might not understand it. You might not even like it, and return it or reg...

Re: High end worthy gyuto

I read this whole thread to simply agree somewhat with jbart. The first knive that comes to mind is takayuki ginsan. Personally, I kind of don't like recommending them, because I enjoy that they are not really hyped up. I would think the Damascus version would fit the bill more for the op, but I thi...

Re: White steel vs. Tomatoes?

Yes, the acid from tomatoes can start to dull your knife that fast. Especially with White steel which doesn't have impressive edge retion to begin with. Depending upon n the white steel heat treatment, it can have piss you off edge retention. Sometimes you have to find the sweet spot for a particul...

Re: White steel vs. Tomatoes?

I don’t think it has anything to do with the steel, I think it has everything to do with the fact that you are cutting one of the most difficult food items that exists. Depending on the variety and ripeness, they really need a serrated blade to do them justice. I think your observation is subjectiv...

Re: Konosuke Updates

I figured. I am puzzled as to why the MM B2 knives are 50 mm tall, but Konosuke ginsan knives tend to run much shorter. I am sure you have a good reason. Thanks for answering. Guess I’ll have to settle for ... an SKD! I've always been curious about this as well, great question. It is the only reaso...

Re: Ginsu Knife

So are you saying out of all the shi* knives, the ginsu was the best. I like the Miracle Blade better, Ginsu has too much flex and a sharp spine. The Miracle Blade has the control ball that beats any regular spine for comfort. Miracle blade was the first knives I bought. I still have a serrated han...

Re: Ginsu Knife

So are you saying out of all the shi* knives, the ginsu was the best. I don't think that's saying too much. Put it up against an entry level Japanese or other legit kitchen knife, and you won't be puzzled anymore. It's like saying you liked Cicis pizza over a very bad frozen pizza, who cares.

it cuts great - prepped for some vege fried rice tonight and length wise medium sized carrots smooth silent sailing. The grind kinda reminds me of my Fujiyama. Thansk CKTG - I snagged a Fujiyama FM 240 nearly in my budget! I hope the White#1 version is good!
Nice snag man, catching one at $300 is probably as about as good as it can get. Smart move to stretch your budget some.
