Well said. i hope these keep coming and i have time to grab them. its not such al bad thing, if they sit for awhile. its not like you can just get more right away, if they sell out in seconds. They will still sell just fine.

Honestly, if you like your nakiri and want to expand / grow in tbe cleaver life, you could go cck large cleaver. I have small stainless and it blazes through the dense veggies you are referring to. i would expect the gihie to wedge some in cabbage but i havent used it on that ingredient that i can ...

I wouldn't describe the ys as thicked spine. Although a little thicker than a "true" laser like shibata, the knife is still pretty light and feels and handles very laser like. Very interesting, very good knifes imo. I would say the mm I handled, if my memory serves me correctly would be the heftier...

The Takayuki is a good performer. It is a true laser. It is very light and will feel it, some like that, some don't.
