I had a 180 shig Nakiri and the grind was excellent. The best out of the three shig nakiris I used. I miss that one, probably shouldn't of sold it but oh well.

Yeah I've busted out my kashimas at work the last couple of days, and my initial impression is that I'm really glad I backtracked and rebought this one.

I liked my 240 Kashima so much it made me pick up a 210 Kotetsu. For the way I like to cut these are wonderful knives. That said, I wonder if the custom handle thing impacted sales velocity at all. I had one with the konosuke handle. I liked it but sold it, because it was just chilling in the drawer mostly. But I needed a smaller, stainless knife, and I missed how this gyuto sort of dually acts as a petty. It's super nimble for stuff like Supremes and other fruit and can do all the other stuff...
