Re: Polishing Shoulders?

Often when people refer to “knocking down the shoulders” they are doing this to reduce wedging. Is you cleaver wedging slot or not performing how you would like. Usually the shoulders would be at the transition, where the grind kicks in.

He should get a refund from whatever vendor sold them to him. A lot of them warn of using on bone or frozen foods and not use glass or other hard boards, but they never said not to leave them on the roof of your car and drive off. How was he to know that wouldn’t be good for them??

Is it me or am I seeing the hollow grind on it? :O Probably more my shitty photography, I'll try to get a better picture and get it up later this evening. Kyuso does mainly wide bevels, I doubt there is an intended hollow grind there. All good, I am sure you'd see why I'd think that. Kagegiko Blue ...

Re: Improving this cleaver.

Okay, I will be the naysayer here...the knife world needs another cheap Chinese cleaver like it needs another iron-clad white steel gyuto...The CCK is a perfectly fine knife...you don't get the cleaver for aesthetics. And wow, prices have jumped since I last purchased one 5 years ago. Really though...
