Re: Your top knife of 2023?

Shockingly enough mine was a 240mm Yamada gyuto. People consider them wedge monsters, but I got mine made with a very extreme taper and slightly thinner grind. It’s a beast that surpassed all my expectations. Great when this happens. A wonderful thing. Happy for you. Similar thing on a Miura AS 210...

Re: Your top knife of 2023?

240mm's -Hatsukukoro Blue #1 dammy, and then my first wide bevel Hado White #1 picked up late summer. A lot with the Hado, but lately have been switching back and forth between them with perhaps a lean to the Hado. Just picked up two K-tips, but that is this year and haven't seen enough use yet.

Re: 25% 0ff Thermapen MK4

I bought mine a few years back along with the smoke bbq monitor setup, with case. Got the silicon jacket for the pen, since it had magnets and lives handily next to the range. For anyone of interest the silicon jacket takes a bit of effort to get on and must be removed to change batteries. They also...

Since 12 weeks has passed 12X5 plus 270 = $330. You may be able to low ball her at and get a great deal at 270. Even a...

Steel and pocket knives

Gyutos in SKD12 - How does this compare to another steel in terms of edge holding? IE: Slightly longer than White#2. Pocket knives/edc - I own/owned low end knives as Case, Schrade, Buck etc and am simply not pleased with them. To me, terrible to sharpen and never get where I want it to go. A little...

Re: WTS: Yoshimi Hino 240 W2

I am handed right, so it works for me. Having used both D and octagon, to me there is a slight difference. Having said that, most often I prefer a D handle. It is much more the size rather than the shape for me though.
Wonder how many people understand what a deal this is.

Kono ys may be calling your name. Diamonds should be fine, though with your wording your selection may fall sort in grit.

Re: Strops necessary

All you need to do is take a piece of cardboard (IE; cereal box) and tape it to something, even the very edge of your table to keep it from sliding around. Strop like your finishing strokes of sharpening, on the unfinished side. ALWAYS edge trailing, Then take it from there, if you like what that do...

Re: Sharpening a friends Cutco knives

My vote for the best way to sharpen damaged cutco knives are to preferably find a cutco sharpening dealer and drop them off, or in lieu of that to send them in. Then you can maintain them for him/her. While I do not know how cutco sharpens, my guess would be knives in the condition these are in they...

Re: First rule of sharpening?

Rather interesting attempting to single out a single aspect, from a package deal. I have seen to many times to my taste, images of beginners which have completely destroyed edge profiles. So for me, sweep the entire blade heel to tip. If you must work in sections, then stroke shift, stroke shift and...

Good that you posted. The height of the blade should be taken into consideration before any upwards grinding however slight. 210's are typically shorter in height along with length.
