Shockingly enough mine was a 240mm Yamada gyuto. People consider them wedge monsters, but I got mine made with a very extreme taper and slightly thinner grind. 240mm's -Hatsukukoro Blue #1 dammy, and then my first wide bevel Hado White #1 picked up late summer. A lot with the Hado, but lately have been switching back and forth between them with perhaps a lean to the Hado. Just picked up two K-tips, but that is this year and haven't seen enough use yet.

I am handed right, so it works for me. Having used both D and octagon, to me there is a slight difference. Having said that, most often I prefer a D handle. It is much more the size rather than the shape for me though.

All you need to do is take a piece of cardboard (IE; cereal box) and tape it to something, even the very edge of your table to keep it from sliding around. My vote for the best way to sharpen damaged cutco knives are to preferably find a cutco sharpening dealer and drop them off, or in lieu of that to send them in.
