Hmm. I have a lot of steels, albeit not that specific blade, and have yet to have a problem with either the sg500 or the kohetsu 800. I actually prefer the 800 but that's just my preference. I like superglue, the non gel kind Does that make changing handles down the road more difficult? The epoxy is what makes changing handles hard. If this approach works for you keep it up. I use the entire stone, every part of it but that doesn’t matter. +1 on the pinch grip. For me anyway, it seems like western handles "get in my way" when trying to maneuver a blade. I only like westerns now for when I'm seriously hacking something with muscle behind it. Think machete.

You will not be disappointed in the Yahiko. I re-handled several for gifts for family. They no longer even touch their other knives. ( Think Henkel and Wustoff)

Milk, butter, chicken broth and chicken in a cast iron pot on an open flame. Simple and delicious and does the same thing for me from about 32 years ago. I never really thought about it to much until I read this. Thank you for the reminder.
