Re: How to refurb an old steel?

Electrolysis on the rod just to "see" where you stand? See how bad the pitting is/if it is there. I hear rust and ASSuME it is pitted somewhat.

Slack jawed.

This just made my jaw drop. I mean, really? Am I missing something? Talk about high end sharpening. Wow.

Re: Blades worthy of rehandling

I re-handle all blades just because it's a hobby and i much prefer a custom look to all my knives. Some like the ho/horn combo. Meh. Not for me. Personal preference. However, last weekend I got in a cheaper knife, planning on re-handling it to gift my neighbor for Christmas. So as I install a burl h...

Re: Shapton Professional 2000

I got one of these a while back in a bulk buy from a brother. Have not used it yet.
Your timing could not have been better for a review. Traveling again this week and threw it in my bag for fun.

I will use it tonight and compare with your thoughts.

Thanks again for a great write-up Kit!

Re: Agomi super vs Hap40?

Hap40 for the win. It will not patina like blue steels but edge retention is great. Being semi stainless, I would not worry as much loaning it out either.

I hope you didn't fail the student automatically? :)

Re: "New": Is it just me?

Deja vu. Was just ( literally ) looking at another ad that said " Completely new, except for cutting....................."

I'm with the " we know it's used just how much " crowd.

Mild rant over. It's Saturday and I'm in the shop building things, so, carry on. :D

Re: Typographical errors on the site.

I'm surprised no one caught this one sooner. In the Looking for a Knife Recommendation? Please read this first. post: 2)What kind of knife do you want? (Gyuto, Santuko , Petty, Paring, Sujihiki, etc.) Good catch. I think most of us don't actually read the questions and just look for the answers. Ma...

Re: Completely confused myself, so I must ask!

Anryu or Kanehiro. I'd avoid any sharpener at a farmers market, outside Ace hardware, etc., until you fully vet them that they know how to sharpen Japanese chef knives, can identify the proper blade angle, have legit whetstones on them, etc. The only one in town (San Diego) that I have found thus f...

Re: “How much better can it be?”

Beauty is in the eye of the beholder... Never has that been more relevant than in hand crafted knives... As a craftsman... I revere another's work.... To watch another, chef, carpenter, mason or blacksmith put there all into it.... Makes me smile. But as a craftsman i also am extremely practical......

Why sell it? Do you prefer making wooden ferrules?
I do. I made a couple but they just don't "do it" for me. I like matching up the burls. Looks better to me.
