It's also hard to get a good sear with sous vide. I prefer it for lean proteins like big pork chops, though, even there, I have had excellent results with the reverse sear.
My experience is quite different. I carefully dry the protein and it sears in seconds.

You should post this question in its own thread for clarity and search ability.

Re: Coffee Lovers

I love coffee, and I find all of the equipment very fascinating. I’m satisfied with my current cheapo Aeropress setup, but I do plan on getting into the more serious stuff after we finish renovating our kitchen. So from what would you guys recommend for a coffee noob like me? What are the “must hav...

Re: Is san mai always 3 layers? How does it differ from warikomi?

Yes, San-mai awase is 3 layers that are placed side by side. San-mai means 3 flat things. The spine is not wrapped. Warikomi awase is when the spine is wrapped. And Ni-mai awase is the technique used in making single bevels where the cladding is on the cutting edge side and spine but not the ura (b...

Re: Coffee Lovers

At home we use a Rancillio Silvia with PID and a Rocky Grinder. It makes the best coffee I have ever tasted, consistently and with no issues in 9 years! (touch wood). Best $1200 I ever spent. https://knifelife7.files.wordpress.com/2019/09/rancilio.jpg I used to use a Schaerer Super Automatic and Bun...

Re: What are some recommendable nontraditional yanagibas?

What exactly does "nontraditional" mean? It's a yanagiba or it isn't. I listed some examples. I said nontraditional, not "not a yanagiba". By nontraditional I meant of a design that isn't traditional for yanagibas. (For examples, the ones I listed did not have the legacy-style Japanese handles; per...

Re: Chef Knife made from 9/11 Building Steel

I gotta say, at first this left a sour taste in my mouth, but I initially imagined someone acquiring the piece of metal at auction (or worse, stealing a piece of the rubble) and then getting the knife made and then using the knife themselves. In this situation, however, I think there's something al...
